🍽️ Crispy Pineapple Slices with Fresh Raspberry Sauce and Whipped Cream

Ingredients
- 1 peach
- 350 g raspberries
- 0.5 orange (juice)
- 1 tsp powdered sugar
- 1 baby pineapple
- 2 tbsp flour
- vegetable oil (for frying)
- 200 ml whipping cream
- 2 tbsp vanilla sugar
Instructions
- 1. Wash the peach thoroughly.
- 2. Cut the peach in half and remove the pit.
- 3. Cut the peach flesh into small pieces.
- 4. Remove the stems from the selected raspberries.
- 5. Take about 100 grams of the raspberries.
- 6. Combine the raspberries with the peach pieces and the orange juice.
- 7. Puree the mixture until smooth.
- 8. Strain the sauce through a fine sieve to remove any lumps.
- 9. Sweeten the sauce to taste with powdered sugar.
- 10. Peel the pineapple and remove the eyes.
- 11. Cut 12 thin, horizontal slices from the middle part of the pineapple.
- 12. Rinse the pineapple leaf tips briefly.
- 13. Dry the leaf tips with a cloth.
- 14. Set aside the leaf tips for garnishing.
- 15. Coat the pineapple slices in flour so they are completely covered.
- 16. Heat the oil in a pan to about 170 degrees Celsius.
- 17. Fry the pineapple slices in batches until golden brown.
- 18. Cook the fried slices for 2 to 3 minutes per side.
- 19. Place the finished slices on kitchen paper to absorb excess oil.
- 20. Whip the cream with the vanilla sugar until stiff.
- 21. Fill the whipped cream into a piping bag.
- 22. Use a star tip for piping.
- 23. Place one pineapple slice on each of four plates.
- 24. Pipe dollops of cream onto the pineapple slice.
- 25. Garnish the slice with a few fresh raspberries.
- 26. Place a second pineapple slice on top.
- 27. Repeat the piping of cream and placing of raspberries.
- 28. Place a third pineapple slice as the top layer.
- 29. Garnish the dessert with the remaining cream.
- 30. Decorate with the prepared pineapple leaves.
- 31. Distribute the remaining raspberries on the plate.
- 32. Drizzle the finished dish with the raspberry sauce.
- 33. Serve the dessert immediately.
