  2. 2. Cut the peach in half and remove the pit.
  3. 3. Cut the peach flesh into small pieces.
  4. 4. Remove the stems from the selected raspberries.
  5. 5. Take about 100 grams of the raspberries.
  6. 6. Combine the raspberries with the peach pieces and the orange juice.
  7. 7. Puree the mixture until smooth.
  8. 8. Strain the sauce through a fine sieve to remove any lumps.
  9. 9. Sweeten the sauce to taste with powdered sugar.
  10. 10. Peel the pineapple and remove the eyes.
  11. 11. Cut 12 thin, horizontal slices from the middle part of the pineapple.
  12. 12. Rinse the pineapple leaf tips briefly.
  13. 13. Dry the leaf tips with a cloth.
  14. 14. Set aside the leaf tips for garnishing.
  15. 15. Coat the pineapple slices in flour so they are completely covered.
  16. 16. Heat the oil in a pan to about 170 degrees Celsius.
  17. 17. Fry the pineapple slices in batches until golden brown.
  18. 18. Cook the fried slices for 2 to 3 minutes per side.
  19. 19. Place the finished slices on kitchen paper to absorb excess oil.
  20. 20. Whip the cream with the vanilla sugar until stiff.
  21. 21. Fill the whipped cream into a piping bag.
  22. 22. Use a star tip for piping.
  23. 23. Place one pineapple slice on each of four plates.
  24. 24. Pipe dollops of cream onto the pineapple slice.
  25. 25. Garnish the slice with a few fresh raspberries.
  26. 26. Place a second pineapple slice on top.
  27. 27. Repeat the piping of cream and placing of raspberries.
  28. 28. Place a third pineapple slice as the top layer.
  29. 29. Garnish the dessert with the remaining cream.
  30. 30. Decorate with the prepared pineapple leaves.
  31. 31. Distribute the remaining raspberries on the plate.
  32. 32. Drizzle the finished dish with the raspberry sauce.
  33. 33. Serve the dessert immediately.
