🍽️ Zucchini Tomato Frittata

Ingredients
- 2 onions
- 500 g zucchini
- 4 tbsp olive oil
- 500 g tomatoes
- salt
- pepper (from the mill)
- 8 eggs
Instructions
- 1. Peel the onions and dice them finely. Wash the zucchini, cut them in half lengthwise, and then slice the halves into rounds about half a centimeter thick.
- 2. Sauté the zucchini in the hot pan with oil while stirring. Add the diced onions and cook everything together for about five minutes. Wash the tomatoes, dice them, and season with salt and pepper.
- 3. Beat the eggs, season with salt and pepper, and pour the mixture over the vegetables. Cover the pan and let the frittata cook for about 15 minutes on low heat until set.
