  1. 1. Wash the leek thoroughly and remove the tough ends.
  2. 2. Cut the leek in half lengthwise.
  3. 3. Slice the leek halves into thin strips.
  4. 4. Heat ghee in a non-stick pan.
  5. 5. Sauté the leek strips over medium heat for about 5 minutes.
  6. 6. Stir regularly so that the leek does not brown.
  7. 7. Peel the garlic and crush it finely.
  8. 8. Whisk the eggs, cream, and grated cheese together in a bowl.
  9. 9. Add the crushed garlic to the egg mixture.
  10. 10. Season the mixture with salt and pepper.
  11. 11. Pour the egg mixture evenly over the leek in the pan.
  12. 12. Lift the mixture slightly to let it combine with the leek.
  13. 13. Cover the pan and let the frittata cook for 3 to 4 minutes.
  14. 14. The bottom should set and turn golden brown.
  15. 15. Carefully flip the frittata using the lid.
  16. 16. Fry the second side for another 3 to 4 minutes until golden brown.
  17. 17. Cut the frittata into pieces.
  18. 18. Serve the frittata warm.
