🍽️ Leek and Cheese Frittata

Ingredients
- 1 large leek stalk
- 1 tbsp clarified butter
- 1 clove garlic
- 8 eggs
- 4 tbsp heavy cream
- 60 g grated Gruyère cheese
- salt
- pepper (from the mill)
Instructions
- 1. Wash the leek thoroughly and remove the tough ends.
- 2. Cut the leek in half lengthwise.
- 3. Slice the leek halves into thin strips.
- 4. Heat ghee in a non-stick pan.
- 5. Sauté the leek strips over medium heat for about 5 minutes.
- 6. Stir regularly so that the leek does not brown.
- 7. Peel the garlic and crush it finely.
- 8. Whisk the eggs, cream, and grated cheese together in a bowl.
- 9. Add the crushed garlic to the egg mixture.
- 10. Season the mixture with salt and pepper.
- 11. Pour the egg mixture evenly over the leek in the pan.
- 12. Lift the mixture slightly to let it combine with the leek.
- 13. Cover the pan and let the frittata cook for 3 to 4 minutes.
- 14. The bottom should set and turn golden brown.
- 15. Carefully flip the frittata using the lid.
- 16. Fry the second side for another 3 to 4 minutes until golden brown.
- 17. Cut the frittata into pieces.
- 18. Serve the frittata warm.
