  1. 1. Whisk the eggs together with the mineral water in a bowl until well combined.
  2. 2. Wash the herbs under running water, pat them dry with a kitchen towel, and chop them finely.
  3. 3. Wash the spring onions, trim the ends, and slice them into thin rings.
  4. 4. Heat some oil in a non-stick pan and sauté the spring onions briefly.
  5. 5. Add the chopped herbs to the pan, stir them in, and spread the mixture evenly across the bottom.
  6. 6. Pour the egg mixture evenly over the herbs and onions.
  7. 7. Place the slices of goat cheese on top of the frittata.
  8. 8. Season everything with a little pepper and a pinch of salt.
  9. 9. Cover the pan and cook the frittata for about 3 to 4 minutes until it is golden brown and the cheese has melted.
