🍰 Fresh Cheese Cake "Easter Meadow"

Ingredients
- 150 g Russian Bread (ABC Cookies)
- 100 g Yogurt Butter
- 700 g Mango (2 Mangoes)
- 6 Sheets White Gelatin
- 400 g Yogurt (1,5 % Fat)
- 400 g Cream Cheese (13 % Fat)
- 50 g Whole Cane Sugar
- 3 Stalks Lemon Balm
Instructions
- 1. Place the cookies in a freezer bag.
- 2. Crush the cookies into fine crumbs using a rolling pin.
- 3. Transfer the cookie crumbs into a bowl.
- 4. Melt the butter in a small saucepan.
- 5. Stir the melted butter into the cookie crumbs.
- 6. Cut a round piece of baking paper with a diameter of 26 cm.
- 7. Place the baking paper on the bottom of a 24 cm springform pan.
- 8. Place the springform ring around the base and lock it so the paper does not slip.
- 9. Spread the cookie-butter mixture over the baking paper at the bottom of the pan.
- 10. Press the mixture firmly with the back of a tablespoon to create an even base.
- 11. Place the pan in the refrigerator for a few minutes.
- 12. Peel the mangoes.
- 13. Slice the flesh off the stone.
- 14. Trim four thin slices (2-3 mm thick).
- 15. Cut out 12 bunnies from the slices using a small cookie cutter.
- 16. Place the mango bunnies on a plate.
- 17. Cover the bunnies with cling film.
- 18. Keep the bunnies cool.
- 19. Dice the remaining mango flesh into small cubes.
- 20. Soak the gelatin in cold water.
- 21. Put yogurt and cream cheese into a bowl.
- 22. Add sugar.
- 23. Whisk the mixture with a hand mixer until the sugar is dissolved.
- 24. Remove the dripping wet gelatin from the water.
- 25. Place the gelatin in a small saucepan.
- 26. Dissolve the gelatin while stirring.
- 27. Stir about 2 tablespoons of the cream cheese mixture into the gelatin.
- 28. Quickly fold the gelatin mixture into the remaining cream cheese-yogurt mixture using a whisk.
- 29. Fold in the mango cubes.
- 30. Spread the mixture over the cookie crust.
- 31. Smooth the surface with a spatula.
- 32. Let the cake set in the refrigerator for at least 3 hours.
- 33. Wash the lemon balm before serving.
- 34. Shake the leaves dry.
- 35. Pluck the leaves from the stems.
- 36. Cut the leaves into fine strips.
- 37. Decorate the cake with the mango bunnies.
- 38. Decorate the cake with the lemon balm strips.
