🍰 Small Cream Cheese Tarts with Forest Berries

Ingredients
- 120 g Butter
- 50 g powdered sugar
- 50 g ground almond kernels
- 150 g flour
- 1 egg yolk
- flour (for working)
- butter (for the molds)
- 200 g cream cheese
- 100 g raspberries
- 100 g blueberries
- 100 g strawberries
- 50 g red currants
- 60 g powdered sugar
- 3 tbsp whipping cream
- mint (as decoration)
Instructions
- 1. Cut the butter into small cubes.
- 2. Place the butter cubes into a bowl.
- 3. Add the powdered sugar to the bowl.
- 4. Add the ground almonds to the bowl.
- 5. Add the flour to the bowl.
- 6. Work all ingredients together with your hands.
- 7. Knead the mixture until it becomes crumbly.
- 8. Knead the egg yolk into the crumbly mixture.
- 9. Add about 4 tablespoons of water to the mixture.
- 10. Continue kneading until a smooth dough forms.
- 11. Shape the dough into a ball.
- 12. Wrap the dough ball in plastic wrap.
- 13. Place the wrapped dough in the refrigerator.
- 14. Let the dough rest for approx. 30 minutes.
- 15. Preheat the oven to 210°C.
- 16. Set the oven to top and bottom heat.
- 17. Sprinkle some flour on the work surface.
- 18. Roll out the dough on the floured surface.
- 19. Prick the dough several times with a fork.
- 20. Grease 6 tartlet molds (approx. 8 cm) with butter.
- 21. Dust the greased molds with flour.
- 22. Place the dough into the prepared molds.
- 23. Place the molds into the hot oven.
- 24. Bake the tarts for 10 minutes.
- 25. Reduce the oven temperature to 180°C.
- 26. Bake the tarts for another approx. 10 minutes.
- 27. Remove the tarts from the oven.
- 28. Let the tarts cool down completely.
- 29. Take the cream cheese mixture for the topping.
- 30. Place the cream cheese into a bowl.
- 31. Add the powdered sugar to the cream cheese.
- 32. Add the cream to the bowl.
- 33. Mix the cream cheese, sugar, and cream well.
- 34. Wash the berries under running water.
- 35. Dry the berries carefully.
- 36. Slice the strawberries.
- 37. Fill the cooled tarts with the cream cheese mixture.
- 38. Decorate the tarts with the berries.
- 39. Garnish the tarts with mint.
- 40. Serve the tarts immediately.
