🍽️ Cream Cheese Lime Cream

Ingredients
- 2 limes
- 75 g fructose
- 11 g powdered gelatin
- 75 ml white wine
- 225 g cream cheese
- 2 drops green food coloring
- 150 ml reduced-fat whipping cream
- 4 meringues
Instructions
- 1. Finely grate the lime zest and squeeze out the juice. Mix the juice with the zest and the fructose, then let the mixture sit for 20 minutes. Sprinkle the gelatin over the wine and dissolve it in a water bath.
- 2. Mix the cream cheese, the lime juice with zest, and the food coloring until smooth. Whip the cream until stiff and gently fold it into the cheese mixture. Crush the meringues into small pieces, add the crumbs to the lime cream, and fill the mixture into four tall glasses.
- 3. Chill the glasses in the refrigerator for about one hour. Serve the cream afterwards, decorated with fresh mint leaves.
