  1. 1. Soak the gelatin leaves in a bowl of cold water.
  2. 2. Puree the peaches into a smooth paste.
  3. 3. Stir the cream cheese and yogurt mixture with powdered sugar and vanilla sugar until smooth.
  4. 4. Gently squeeze the soaked gelatin.
  5. 5. Melt the gelatin over very low heat.
  6. 6. Stir the peach puree into the yogurt cream.
  7. 7. Place the cream in the refrigerator.
  8. 8. Wait until the mixture thickens slightly and begins to set.
  9. 9. Whip the cream until stiff.
  10. 10. Gently fold the whipped cream into the yogurt mixture.
  11. 11. Fill the cream into small glasses.
  12. 12. Remove any stems from the berry fruits.
  13. 13. Rinse the berries very gently if necessary.
  14. 14. Pat the berries dry with a kitchen towel.
  15. 15. Cover the cream with the berries.
  16. 16. Garnish the dessert with fresh lemon balm.
