🍽️ Fresh Pea Puree – smarter

Ingredients
- 1 small garlic clove
- 1 small onion
- 1 organic lemon
- 1 tbsp olive oil
- 250 g peas (frozen)
- 4 tbsp soy cream
- salt
- pepper
- 1 box garden cress
Instructions
- 1. Peel the garlic clove and the onion.
- 2. Wash the lemon thoroughly and dry it.
- 3. Grate the lemon zest finely.
- 4. Cut the lemon in half.
- 5. Squeeze the juice from one lemon half.
- 6. Save the second lemon half for another use.
- 7. Finely chop the garlic and the onion.
- 8. Heat the oil in a pan.
- 9. Sauté the garlic and onion over medium heat until translucent.
- 10. Add the frozen peas to the pan.
- 11. Sauté the peas for one minute.
- 12. Add two tablespoons of water to the pan.
- 13. Add the lemon juice to the pan.
- 14. Add the lemon zest to the pan.
- 15. Boil the mixture for one to two minutes.
- 16. Pour the soy cream into the pan.
- 17. Let the mixture come to a brief boil.
- 18. Transfer the entire mixture into a tall container.
- 19. Puree the mixture finely with a hand blender.
- 20. Season the puree with salt and pepper.
- 21. Cut the cress directly from the bed using kitchen scissors.
- 22. Sprinkle the cress over the pea puree.
- 23. Serve the dish.
