  1. 1. Peel the garlic clove and the onion.
  2. 2. Wash the lemon thoroughly and dry it.
  3. 3. Grate the lemon zest finely.
  4. 4. Cut the lemon in half.
  5. 5. Squeeze the juice from one lemon half.
  6. 6. Save the second lemon half for another use.
  7. 7. Finely chop the garlic and the onion.
  8. 8. Heat the oil in a pan.
  9. 9. Sauté the garlic and onion over medium heat until translucent.
  10. 10. Add the frozen peas to the pan.
  11. 11. Sauté the peas for one minute.
  12. 12. Add two tablespoons of water to the pan.
  13. 13. Add the lemon juice to the pan.
  14. 14. Add the lemon zest to the pan.
  15. 15. Boil the mixture for one to two minutes.
  16. 16. Pour the soy cream into the pan.
  17. 17. Let the mixture come to a brief boil.
  18. 18. Transfer the entire mixture into a tall container.
  19. 19. Puree the mixture finely with a hand blender.
  20. 20. Season the puree with salt and pepper.
  21. 21. Cut the cress directly from the bed using kitchen scissors.
  22. 22. Sprinkle the cress over the pea puree.
  23. 23. Serve the dish.
