  1. 1. Heat 2 tablespoons of oil in a pan.
  2. 2. Add the finely chopped shallot and garlic to the hot oil.
  3. 3. Sauté the vegetables briefly until fragrant.
  4. 4. Add the tomatoes and the meat broth to the pan.
  5. 5. Let the sauce simmer for about 20 minutes.
  6. 6. Season the sauce with a pinch of sugar, salt, and pepper.
  7. 7. Soak the bread rolls in some lukewarm water.
  8. 8. Then squeeze the soaked bread well to remove excess water.
  9. 9. Heat 1 tablespoon of oil in a separate pan.
  10. 10. Sauté the finely chopped shallot and garlic in it.
  11. 11. Add the chopped parsley and thyme.
  12. 12. Let this mixture cool down briefly.
  13. 13. Mix the minced meat with the eggs, the squeezed bread, the cooled vegetable mixture, paprika, mustard, and ketchup.
  14. 14. If necessary, add some breadcrumbs until the mixture is moldable.
  15. 15. Season the meat mixture generously with salt and pepper.
  16. 16. Form small balls from the meat mixture.
  17. 17. Fry the balls in hot oil until golden brown on all sides.
  18. 18. This takes about 10 minutes.
  19. 19. Serve the meatballs with the tomato sauce.
  20. 20. Garnish the dish with fresh thyme leaves.
