🍽️ Juicy Meatballs with a Melted Cheese Center

Ingredients
- 500 g minced meat
- 1 bread roll (from the day before)
- 1 egg
- 1 tbsp mustard
- salt
- pepper
- 1 onion
- 2 tbsp butter
- 2 tbsp oil
- 2 garlic cloves
- 125 g mozzarella
- 1 onion
- 1 can kidney beans (340 g)
- 1 can corn (approx. 250 g drained weight)
- 1 beefsteak tomato
- lemons
- 0.5 bunch parsley
- sambal oelek
Instructions
- 1. Soak the bread roll in a quarter liter of lukewarm water.
- 2. Squeeze the soaked bread roll well with your hands.
- 3. Mix the squeezed bread with the minced meat, the egg, the mustard, the pepper, and the salt.
- 4. Peel the onions and the garlic.
- 5. Finely chop the onions and the garlic.
- 6. Heat one tablespoon of butter in a pan.
- 7. Sauté the onion and garlic mixture in it.
- 8. Fold the fried onion mixture into the meat dough.
- 9. Wet your hands with a little water.
- 10. Divide the meat dough into eight equal portions.
- 11. Press one portion of meat dough into a ball.
- 12. Flatten the ball into a flat disc.
- 13. Place a piece of mozzarella in the center of the meat disc.
- 14. Close the meat dough around the cheese.
- 15. Shape the meatball back into a round form.
- 16. Repeat this with all meat portions.
- 17. Heat the remaining butter and oil in a large pan.
- 18. Fry the meatballs in batches.
- 19. Fry each side of the meatballs for five minutes.
- 20. Remove the finished meatballs from the pan.
- 21. Peel the onion for the salsa.
- 22. Dice the onion finely.
- 23. Drain the kidney beans into a sieve.
- 24. Rinse the kidney beans cold.
- 25. Let the kidney beans drain.
- 26. Let the corn drain as well.
- 27. Blanch the plum tomato briefly in boiling water.
- 28. Shock the tomato cold.
- 29. Peel the skin off the tomato.
- 30. Cut out the stem base from the tomato.
- 31. Cut the fruit flesh of the tomato into pieces.
- 32. Wash the parsley.
- 33. Shake the parsley dry.
- 34. Finely chop the parsley.
- 35. Mix all salsa ingredients in a bowl.
- 36. Season the salsa with sambal oelek.
- 37. Let the salsa infuse for at least thirty minutes.
- 38. Serve the meatballs with the salsa.
