🍽️ Crispy Meatballs with Creamy Cucumber Stew

Ingredients
- 300 g mixed minced meat
- 0.5 onion
- 20 g butter
- 0.5 stale roll
- 1 egg
- salt
- pepper
- 3 tbsp vegetable oil
- 750 g cooking cucumber
- 1 onion
- 1 garlic clove
- 2 tbsp oil
- 0.5 lemon
- 2 tbsp mustard
- 200 g whipping cream
- 2 tbsp chopped parsley
- 1 packet mashed potato powder
Instructions
- 1. Heat a pan with a little oil over medium-high heat.
- 2. Peel the onion and chop it very finely.
- 3. Heat the butter in a separate small pan and soften the chopped onion in it without letting it brown.
- 4. Briefly dip the breadcrumbs (or stale bread) into hot water.
- 5. Squeeze the soaked breadcrumbs well with your hands until they are dry.
- 6. Add the squeezed breadcrumbs, the sautéed onion, salt, and pepper to the minced meat.
- 7. Work the ingredients together with your hands to form a uniform meat mixture.
- 8. Wet your hands with a little water so the mixture does not stick.
- 9. Shape the meat mixture into small, flat meatballs.
- 10. Fry the meatballs in the preheated pan with oil.
- 11. Fry them for about 6 minutes on each side until golden brown and cooked through.
- 12. Remove the cooked meatballs from the pan and keep them warm.
- 13. Peel the cucumbers and scrape out the seeds with a spoon.
- 14. Slice the deseeded cucumber halves into thin slices.
- 15. Peel the onion and garlic and chop both finely.
- 16. Sauté the chopped onion and garlic in a little oil in a clean pan.
- 17. Squeeze the lemon and add the juice along with the cucumber slices, salt, and mustard to the pan.
- 18. Add half of the cream and bring the mixture to a brief boil.
- 19. Reduce the heat to low and simmer the vegetables for about 5 minutes until tender.
- 20. Stir in the remaining cream gradually into the vegetables.
- 21. Prepare the mashed potatoes according to the instructions on the package.
- 22. Serve the meatballs together with the warm cucumber stew and the mashed potatoes.
- 23. Garnish the dish with freshly chopped parsley.
