  1. 1. Pour the soy milk into a shallow bowl.
  2. 2. Stir in the rice flour, cinnamon, and one and a half tablespoons of maple syrup.
  3. 3. Dip the toast slices briefly into the liquid.
  4. 4. Turn the slices so that both sides are coated.
  5. 5. Heat coconut oil in a frying pan.
  6. 6. Place the toast slices into the hot pan one by one.
  7. 7. Fry the slices over medium heat for about four to five minutes.
  8. 8. Turn the slices regularly until they are golden brown.
  9. 9. Peel a banana for the topping.
  10. 10. Slice the banana into thin pieces.
  11. 11. Put coconut yogurt, vanilla powder, and the remaining maple syrup into a small bowl.
  12. 12. Stir the yogurt mixture until smooth.
  13. 13. Place two toast slices on each plate.
  14. 14. Add a dollop of the yogurt mixture on top of the French toast.
  15. 15. Arrange the banana slices on top.
  16. 16. Sprinkle the dish with pistachios.
