🍰 Vegan French Toast

Ingredients
- 170 ml soy drink (soy milk) (alternatively oat or rice milk)
- 3 tbsp rice flour (15 g each)
- 1 tsp cinnamon
- 2 tbsp maple syrup
- 4 slices whole wheat toast
- 2 tsp coconut oil
- 1 banana
- 60 g coconut yogurt
- 1 pinch vanilla powder
- 2 tbsp chopped pistachio kernels (15 g each)
Instructions
- 1. Pour the soy milk into a shallow bowl.
- 2. Stir in the rice flour, cinnamon, and one and a half tablespoons of maple syrup.
- 3. Dip the toast slices briefly into the liquid.
- 4. Turn the slices so that both sides are coated.
- 5. Heat coconut oil in a frying pan.
- 6. Place the toast slices into the hot pan one by one.
- 7. Fry the slices over medium heat for about four to five minutes.
- 8. Turn the slices regularly until they are golden brown.
- 9. Peel a banana for the topping.
- 10. Slice the banana into thin pieces.
- 11. Put coconut yogurt, vanilla powder, and the remaining maple syrup into a small bowl.
- 12. Stir the yogurt mixture until smooth.
- 13. Place two toast slices on each plate.
- 14. Add a dollop of the yogurt mixture on top of the French toast.
- 15. Arrange the banana slices on top.
- 16. Sprinkle the dish with pistachios.
