🍽️ Juicy Pepper Steak with Cognac Cream Sauce

Ingredients
- 2 tbsp black and 2 tbsp white peppercorns
- 4 allspice berries
- 4 beef fillet steaks (a 200 g)
- 2 tbsp oil
- salt
- 40 g butter
- 4 tbsp cognac (or brandy)
- 300 ml heavy cream
- a few drops lemon juice
Instructions
- 1. Coarsely crush the peppercorns and allspice berries in a mortar.
- 2. Turn the filet steaks in the ground spices until they are coated all over.
- 3. Heat oil in a large frying pan.
- 4. Sear the steaks for 2 minutes per side.
- 5. Reduce the heat and cook the steaks for another 4 minutes.
- 6. Turn the steaks 2 to 3 times during this time.
- 7. Remove the steaks from the pan and place them on a plate.
- 8. Lightly salt the steaks.
- 9. Cover the steaks with aluminum foil.
- 10. Let the steaks rest for 5 minutes.
- 11. Add butter and cognac to the hot pan.
- 12. Let the mixture foam briefly.
- 13. Pour the cream into the pan.
- 14. Simmer the sauce until it becomes creamy.
- 15. Season the sauce with salt and lemon juice.
- 16. Stir the juices released by the steaks into the sauce.
- 17. Serve the steaks with the sauce.
