🍲 Hearty French Cabbage and Bean Soup

Ingredients
- 150 g dried white beans
- 1 large onion
- 1 bay leaf
- 2 cloves
- 1 garlic clove
- 4 sprigs marjoram
- 1 ham bone (or alternatively 1 slice smoked bacon)
- 600 g white cabbage
- 400 g waxy potatoes
- salt
- pepper
- 4 slices crusty bread
Instructions
- 1. Place the beans in a bowl and cover with cold water. Let them soak for 12 hours or overnight.
- 2. The next day, drain the soaking water. Rinse the beans in a sieve under running water and place them in a large pot.
- 3. Peel the onion. Press the bay leaf and cloves firmly into the onion (this is called studbing) and add the onion to the beans.
- 4. Peel the garlic and add it to the pot. Wash the marjoram, shake off excess water, and add it along with the ham bone. Pour in 3 liters of water.
- 5. Bring the soup to a boil. Skim off the rising foam with a skimmer. Reduce the heat to medium and let the soup simmer for 60 minutes.
- 6. Wash the cabbage and remove the hard core end. Cut the cabbage into quarters and slice these into strips about 1 cm wide, cutting across the ribs.
- 7. Wash the potatoes. Peel them using a vegetable peeler and cut them into cubes about 2 cm in size.
- 8. After 60 minutes, remove the ham bone from the soup. Add the sliced cabbage and potato cubes to the soup and cook everything for another 20 minutes.
- 9. Remove the spiced onion and garlic from the soup. Season the soup with salt and pepper. Distribute the bread slices among 4 deep bowls, pour the soup over them, add extra pepper, and serve hot.
