🍽️ Frankfurt Green Sauce – Smarter

Ingredients
- 2 eggs
- 125 g Frankfurt herbs (1 bunch)
- 1 onion
- 50 g cream cheese (13 % fat)
- 300 g yogurt (0,3 % fat)
- 1 tbsp medium-hot mustard
- 1 small lemon
- salt
- pepper
- 500 g new potatoes
Instructions
- 1. Place the eggs in boiling water.
- 2. Boil the eggs for 8 to 9 minutes until hard-boiled.
- 3. Rinse the eggs under cold water to stop the cooking process.
- 4. Peel the eggs and let them cool down.
- 5. Wash the herbs thoroughly.
- 6. Shake the herbs dry.
- 7. Remove the thick stems from the herbs.
- 8. Finely chop the herbs using a large knife.
- 9. Peel the onion.
- 10. Cut the onion into very fine cubes.
- 11. Place the cream cheese in a bowl.
- 12. Stir the cream cheese smoothly with a whisk.
- 13. Fold the chopped herbs into the cream cheese mixture.
- 14. Add the onion cubes.
- 15. Add the yogurt.
- 16. Add the mustard.
- 17. Cut the lemon in half.
- 18. Squeeze the lemon juice by hand into the sauce.
- 19. Season the sauce with salt and pepper.
- 20. Chop the cooled eggs.
- 21. Mix the eggs into the sauce.
- 22. Let the sauce rest for 30 minutes.
- 23. Wash the potatoes well.
- 24. Boil the potatoes in salted water for 20 to 25 minutes.
- 25. Rinse the potatoes briefly with cold water.
- 26. Peel the potatoes if necessary.
- 27. Serve the potatoes with the Frankfurter Green Sauce.
