🍽️ Grilled Trout

Ingredients
- 4 Trout (ready for cooking; 250 g each)
- Salt
- Pepper (from the mill)
- 1 untreated Lemon
- 4 Sprigs Rosemary
- 8 Sprigs Thyme
- 2 tbsp Olive oil
Instructions
- 1. Preheat your oven to the grill setting at 200 degrees Celsius. If using fan-assisted heat, set it to 180 degrees Celsius. For gas ovens, use setting 3. Place the oven rack on a baking sheet.
- 2. Thoroughly wash the trout under running water. Pat them completely dry with kitchen paper. Season the fish inside and out with salt.
- 3. Rinse a lemon under hot water and dry it. Slice the lemon into thin rounds. Place two or three of these slices inside the belly cavity of the fish. Add one sprig of rosemary and two sprigs of thyme to the cavity as well.
- 4. Open the trout so it lies flat. Brush the surface with oil. Place the fish on the oven rack. Fold the fish back together and place it on the grill. Brush both sides of the fish with a little more oil. Place the baking sheet with the fish on the second or third rack from the top. Roast the fish for about 10 minutes until browned. Turn the fish and grill the other side for another 10 minutes. The fish is done when the dorsal fin can be pulled out easily. If not, grill it a little longer.
- 5. Remove the fish from the oven. Place each fish on its own plate or serving platter. Serve the grilled trout with lemon wedges and fresh herbs as a garnish, if desired.
