🍽️ Trout fillets in herb-tomato foil packets

Ingredients
- 2 medium trout (approx. 350 g each, ready for the kitchen)
- salt
- pepper (from a mill)
- 1 bunch parsley
- 2 sprigs thyme
- 2 garlic cloves
- 50 g stale white bread
- 4 meat tomatoes
- 5 tbsp olive oil
Instructions
- 1. Rinse the trout thoroughly under running water.
- 2. Pat the fish dry inside and out with a kitchen towel.
- 3. Season the trout on both sides with salt and pepper.
- 4. Pick the leaves off the parsley and thyme stems.
- 5. Peel the garlic.
- 6. Finely chop the herbs and garlic together.
- 7. Cut off the crust from the white bread or rolls (this is called removing the crust).
- 8. Crumble the bread finely.
- 9. Mix the bread crumbs with the herb-garlic mixture.
- 10. Add salt, pepper, and two tablespoons of oil to the bread mixture.
- 11. Pour boiling water over the tomatoes briefly.
- 12. Remove the tomatoes immediately from the hot water and plunge them into cold water (this is called shocking).
- 13. Peel the skin off the tomatoes.
- 14. Cut the tomatoes in half.
- 15. Remove the seeds from the tomato halves.
- 16. Dice the tomato flesh into small cubes.
- 17. Place a piece of baking paper or roasting foil on a work surface.
- 18. Spread the tomato cubes on the foil.
- 19. Place the seasoned trout directly on top of the tomatoes.
- 20. Sprinkle the fish evenly with the herb-bread mixture.
- 21. Drizzle some olive oil over the entire packet.
- 22. Fold the edges of the foil over the fish and tomatoes.
- 23. Seal the packet tightly so that no air can escape.
- 24. Twist the ends of the foil tightly, like a candy wrapper.
- 25. Preheat the oven to 200 degrees.
- 26. Place the foil packet on a baking rack.
- 27. Slide the packet into the preheated oven.
- 28. Make sure the packet does not touch the oven walls.
- 29. Let the trout cook for about 15 minutes.
- 30. Take the packet out of the oven carefully.
- 31. Open the foil gently so that the steam and liquid do not escape.
- 32. Remove the trout from the packet.
- 33. Place the tomatoes on a serving plate.
- 34. Season the tomatoes with a little salt and pepper.
- 35. Arrange the trout on top of the tomatoes.
