  1. 1. Rinse the trout thoroughly under running water.
  2. 2. Pat the fish dry inside and out with a kitchen towel.
  3. 3. Season the trout on both sides with salt and pepper.
  4. 4. Pick the leaves off the parsley and thyme stems.
  5. 5. Peel the garlic.
  6. 6. Finely chop the herbs and garlic together.
  7. 7. Cut off the crust from the white bread or rolls (this is called removing the crust).
  8. 8. Crumble the bread finely.
  9. 9. Mix the bread crumbs with the herb-garlic mixture.
  10. 10. Add salt, pepper, and two tablespoons of oil to the bread mixture.
  11. 11. Pour boiling water over the tomatoes briefly.
  12. 12. Remove the tomatoes immediately from the hot water and plunge them into cold water (this is called shocking).
  13. 13. Peel the skin off the tomatoes.
  14. 14. Cut the tomatoes in half.
  15. 15. Remove the seeds from the tomato halves.
  16. 16. Dice the tomato flesh into small cubes.
  17. 17. Place a piece of baking paper or roasting foil on a work surface.
  18. 18. Spread the tomato cubes on the foil.
  19. 19. Place the seasoned trout directly on top of the tomatoes.
  20. 20. Sprinkle the fish evenly with the herb-bread mixture.
  21. 21. Drizzle some olive oil over the entire packet.
  22. 22. Fold the edges of the foil over the fish and tomatoes.
  23. 23. Seal the packet tightly so that no air can escape.
  24. 24. Twist the ends of the foil tightly, like a candy wrapper.
  25. 25. Preheat the oven to 200 degrees.
  26. 26. Place the foil packet on a baking rack.
  27. 27. Slide the packet into the preheated oven.
  28. 28. Make sure the packet does not touch the oven walls.
  29. 29. Let the trout cook for about 15 minutes.
  30. 30. Take the packet out of the oven carefully.
  31. 31. Open the foil gently so that the steam and liquid do not escape.
  32. 32. Remove the trout from the packet.
  33. 33. Place the tomatoes on a serving plate.
  34. 34. Season the tomatoes with a little salt and pepper.
  35. 35. Arrange the trout on top of the tomatoes.
