🍽️ Pan-fried Trout with Crispy Almond Flakes

Ingredients
- 4 Trout (ready for the kitchen, approx. 250 g each)
- Lemon juice
- Salt
- Pepper (from the mill)
- 50 g Flour
- 2 tbsp Ghee
- 3 tbsp Butter
- 2 tbsp freshly chopped Parsley
- Parsley
- Lemon wedges
- 1 tbsp Almond flakes
Instructions
- 1. Rinse the trout under cold running water and pat them completely dry with a kitchen towel.
- 2. Squeeze some lemon juice onto the inside and outside of the fish.
- 3. Season the trout generously with salt and freshly ground pepper.
- 4. Coat the fish in flour until they are lightly dusted all over.
- 5. Heat ghee (clarified butter) in a large frying pan.
- 6. Place the trout into the hot pan.
- 7. Fry the fish slowly for about 8 to 10 minutes on each side until golden brown.
- 8. Baste the fish by spooning some of the fat from the pan over them repeatedly.
- 9. Check for doneness by gently pulling the dorsal fin; it should come away easily when the fish is cooked.
- 10. Remove the cooked trout from the pan and place them on pre-warmed plates.
- 11. Pour off most of the frying fat from the pan, but leave a small amount behind.
- 12. Add the remaining butter to the pan and let it foam slightly until it takes on a light brown color.
- 13. Add the almond flakes to the pan and stir them briefly with the butter.
- 14. Distribute the warm almond flakes evenly over the trout.
- 15. Garnish the dish with fresh parsley and lemon wedges according to taste.
- 16. Serve the trout immediately while hot.
