  1. 1. Wash the trout thoroughly and pat them dry with a kitchen towel. Drizzle with some lemon juice and season the fish inside and out with salt and pepper.
  2. 2. Wash the fresh herbs and shake off excess water. Then chop them finely. Peel the garlic cloves.
  3. 3. Clean the mushrooms and slice them thinly. Wash the spring onions, trim the ends, and slice them into small rings. Place the mushroom slices and onion rings in a bowl and press the garlic over them.
  4. 4. Add the soft butter and chopped herbs to the mushrooms and mix everything well. Season the filling with salt and pepper. Stuff this mixture into the prepared trout and close the openings with toothpicks.
  5. 5. Lightly brush the stuffed trout with some oil. Grill or fry them on the grill or in a pan for about 4 minutes per side.
