🍽️ Pan-fried Trout with Steamed Broccoli

Ingredients
- 4 trout (ready for the kitchen, approx. 300 g each)
- lemon juice
- salt
- pepper (from the mill)
- 50 g flour
- 2 tbsp ghee
- 500 g broccoli florets
- 3 tbsp butter
- 2 tbsp freshly chopped parsley
Instructions
- 1. Rinse the trout under running water.
- 2. Pat the fish completely dry with a kitchen towel.
- 3. Drizzle the trout inside and out with lemon juice.
- 4. Season the fish with salt and pepper to taste.
- 5. Coat the trout in flour until lightly covered.
- 6. Heat two tablespoons of ghee in a large frying pan.
- 7. Fry the trout on each side for five to six minutes until golden brown.
- 8. Baste the fish with the cooking fat repeatedly while frying.
- 9. Check for doneness by gently pulling out the dorsal fin.
- 10. Rinse the broccoli under running water.
- 11. Let the broccoli drain well.
- 12. Heat one tablespoon of butter in a separate pan.
- 13. Sauté the broccoli in the butter for a short time.
- 14. Season the broccoli with a pinch of salt.
- 15. Pour a small splash of water into the pan.
- 16. Steam the broccoli covered for about five minutes until tender.
- 17. Remove the cooked trout from the pan.
- 18. Place the fish on pre-warmed plates.
- 19. Foam the remaining butter in the fish pan.
- 20. Brown the butter slightly until it smells nutty.
- 21. Add the almonds and the parsley to the pan.
- 22. Mix the ingredients briefly with the cooking fat.
- 23. Pour the mixture over the trout.
- 24. Place the steamed broccoli next to the fish.
- 25. Serve the dish immediately.
