  1. 1. Rinse the trout under running water.
  2. 2. Pat the fish completely dry with a kitchen towel.
  3. 3. Drizzle the trout inside and out with lemon juice.
  4. 4. Season the fish with salt and pepper to taste.
  5. 5. Coat the trout in flour until lightly covered.
  6. 6. Heat two tablespoons of ghee in a large frying pan.
  7. 7. Fry the trout on each side for five to six minutes until golden brown.
  8. 8. Baste the fish with the cooking fat repeatedly while frying.
  9. 9. Check for doneness by gently pulling out the dorsal fin.
  10. 10. Rinse the broccoli under running water.
  11. 11. Let the broccoli drain well.
  12. 12. Heat one tablespoon of butter in a separate pan.
  13. 13. Sauté the broccoli in the butter for a short time.
  14. 14. Season the broccoli with a pinch of salt.
  15. 15. Pour a small splash of water into the pan.
  16. 16. Steam the broccoli covered for about five minutes until tender.
  17. 17. Remove the cooked trout from the pan.
  18. 18. Place the fish on pre-warmed plates.
  19. 19. Foam the remaining butter in the fish pan.
  20. 20. Brown the butter slightly until it smells nutty.
  21. 21. Add the almonds and the parsley to the pan.
  22. 22. Mix the ingredients briefly with the cooking fat.
  23. 23. Pour the mixture over the trout.
  24. 24. Place the steamed broccoli next to the fish.
  25. 25. Serve the dish immediately.
