🍽️ Trout fillets baked in paper packets

Ingredients
- 4 larger trout fillets (skinless, about 700 g)
- 2 shallots (cut into fine strips)
- 4 sprigs rosemary
- 2 tbsp clarified butter
- 4 tbsp lemon juice
- 4 lemon slices
- 4 tbsp olive oil
- 4 tbsp vermouth
- salt
- pepper (from the mill)
Instructions
- 1. Preheat the oven to 200 degrees.
- 2. Cut parchment paper (heat-resistant baking paper) or aluminum foil into four large rectangles.
- 3. Make sure the rectangles are large enough to wrap the fish fillets in.
- 4. Brush the paper rectangles with melted clarified butter.
- 5. Place one trout fillet in the center of each prepared rectangle.
- 6. Distribute the onion strips over the four fish fillets.
- 7. Place the rosemary on the fillets.
- 8. Place lemon slices on top as decoration.
- 9. Mix 4 tablespoons of lemon juice, 4 tablespoons of olive oil, 4 tablespoons of vermouth, and 4 tablespoons of water in a bowl.
- 10. Drizzle the prepared liquid over the fillets.
- 11. Season everything with coarse pepper and salt.
- 12. Take the top and bottom edges of the paper.
- 13. Roll them together until the fillet is securely wrapped.
- 14. Twist the sides together like a candy wrapper.
- 15. Tuck the ends under the packet.
- 16. Moisten the top with water until the paper is tightly sealed.
- 17. Bake the fillets in the oven on a baking sheet.
