  1. 1. Rinse the trout under cold water and pat them completely dry with kitchen paper. Season the fish inside and out with salt and pepper, then brush them with the olive oil.
  2. 2. Tear the parchment paper into four large pieces. Place one sprig of oregano and one sprig of rosemary on each piece, put the fish on top, and seal the packets securely.
  3. 3. Grill the trout in the parchment paper on the grill rack over medium heat for about 12 minutes per side. Remove the packets from the grill, place them on four plates, and open them carefully. Serve the trout with lemon slices.
