🍽️ Fondue with Various Sauces

Ingredients
- 100 g Skyr
- 3 tbsp Quark (20 % Fett)
- 1 tbsp sweet mustard
- 1 tbsp medium-hot mustard
- 3 tbsp lemon juice
- salt
- pepper (from the mill)
- 1 tbsp chives
- 250 g crème fraîche
- 3 tbsp tomato ketchup
- 1 tbsp pickled green peppercorns
- 1 drop Tabasco
- 1 banana
- 100 g yogurt (3.5 % Fett)
- 2 tbsp curry powder
- 1 lemon
- 800 g beef fillet
- 180 g gherkins (1 small jar)
- 180 g mixed pickles (1 small jar)
- 180 g pearl onions (1 small jar)
- vegetable oil for frying
Instructions
- 1. Mix both types of quark, mustard, and 2 tablespoons of lemon juice together.
- 2. Season the quark mixture with salt and pepper.
- 3. Sprinkle the quark mixture with chives.
- 4. Mix 150 g of crème fraîche, tomato ketchup, green peppercorns, and Tabasco together.
- 5. Adjust the pepper mixture to taste with salt and pepper.
- 6. Peel the banana and mash it.
- 7. Mix the mashed banana with the remaining crème fraîche and yogurt.
- 8. Season the banana mixture with curry, salt, pepper, and 1 tablespoon of lemon juice.
- 9. Cut the fillet into bite-sized cubes.
- 10. Drain the cornichons, mixed pickles, and pearl onions.
- 11. Arrange the meat, drained sides, and sauces on a platter.
- 12. Heat the oil in a pot on the stove.
- 13. Pour the hot oil into a fondue pot.
- 14. Keep the fondue pot hot on the burner.
- 15. Skewer the meat on fondue forks.
- 16. Fry the meat in the hot fat according to your preferences.
- 17. Season the fried meat to your liking.
- 18. Dip the meat into the prepared sauces.
