  1. 1. Dissolve the yeast in about 200 milliliters of lukewarm water.
  2. 2. Mix the flour with one teaspoon of salt in a large bowl.
  3. 3. Add the yeast solution and the olive oil to the flour mixture.
  4. 4. Knead everything with the dough hooks of a hand mixer until you have a smooth dough that no longer sticks to the bowl.
  5. 5. Adjust the amount of water slightly if necessary, if the dough seems too dry or too wet.
  6. 6. Let the dough rise covered in a warm place for about 45 minutes until it has doubled in size.
  7. 7. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  8. 8. Peel the shallots.
  9. 9. Slice the shallots crosswise into thin slices.
  10. 10. Work the risen dough briefly again on a lightly floured work surface.
  11. 11. Roll out the dough into a large flatbread with a thickness of about 1.5 centimeters.
  12. 12. Place the dough on a baking sheet greased with olive oil.
  13. 13. Distribute the shallot slices evenly over the dough.
  14. 14. Drizzle some olive oil over the focaccia.
  15. 15. Season the pastry with salt and pepper to taste.
  16. 16. Bake the focaccia in the preheated oven for about 25 minutes until golden brown.
