🍽️ Crispy Focaccia with Caramelized Shallots

Ingredients
- 21 g yeast (0.5 cube)
- 400 g flour
- salt
- 50 ml olive oil
- 5 shallots
- flour (for the work surface)
- olive oil (for the baking sheet and for brushing)
- pepper
Instructions
- 1. Dissolve the yeast in about 200 milliliters of lukewarm water.
- 2. Mix the flour with one teaspoon of salt in a large bowl.
- 3. Add the yeast solution and the olive oil to the flour mixture.
- 4. Knead everything with the dough hooks of a hand mixer until you have a smooth dough that no longer sticks to the bowl.
- 5. Adjust the amount of water slightly if necessary, if the dough seems too dry or too wet.
- 6. Let the dough rise covered in a warm place for about 45 minutes until it has doubled in size.
- 7. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 8. Peel the shallots.
- 9. Slice the shallots crosswise into thin slices.
- 10. Work the risen dough briefly again on a lightly floured work surface.
- 11. Roll out the dough into a large flatbread with a thickness of about 1.5 centimeters.
- 12. Place the dough on a baking sheet greased with olive oil.
- 13. Distribute the shallot slices evenly over the dough.
- 14. Drizzle some olive oil over the focaccia.
- 15. Season the pastry with salt and pepper to taste.
- 16. Bake the focaccia in the preheated oven for about 25 minutes until golden brown.
