  1. 1. Bring a large pot of water and plenty of salt to a rolling boil.
  2. 2. Add the crayfish to the boiling water.
  3. 3. Reduce the heat slightly.
  4. 4. Cook the crayfish for about 8 minutes until done.
  5. 5. Drain the crayfish.
  6. 6. Rinse them briefly with cold water to stop the cooking process.
  7. 7. Let the crayfish drain well.
  8. 8. Peel the garlic cloves.
  9. 9. Slice the garlic into thin slices.
  10. 10. Mix the garlic with the oil.
  11. 11. Add the garlic-oil mixture to the drained crayfish.
  12. 12. Heat a grill plate or pan until very hot.
  13. 13. Place the marinated crayfish on the hot grill plate.
  14. 14. Fry the crayfish for 4 to 5 minutes.
  15. 15. Turn the crayfish occasionally so they heat through evenly.
  16. 16. Finely chop the fresh herbs.
  17. 17. Mix the chopped herbs into the hot crayfish.
  18. 18. Drizzle some lemon juice over the finished dish.
  19. 19. Serve the crayfish immediately.
