🍽️ Crayfish Cocktail on Arugula Bed

Ingredients
- 150 g Mayonnaise
- 3 tbsp Ketchup
- 20 ml Cognac
- 1 tbsp Tomato Paste
- 1 dash Lemon Juice
- 1 tsp Horseradish
- 1 dash Worcestershire Sauce
- Salt
- Cayenne Pepper
- 600 g Crayfish (ready for cooking)
- 100 g Arugula
- 2 tbsp Freshly Chopped Parsley
- 4 Lemon Wedges
Instructions
- 1. Stir the mayonnaise together with the ketchup, cognac, tomato paste, lemon juice, and horseradish until smooth. Season the sauce to taste with Worcestershire sauce, a pinch of salt, and some cayenne pepper.
- 2. Wash the crayfish thoroughly and pat them dry with a kitchen towel. Then mix the crayfish pieces in a bowl with the prepared sauce. Wash the arugula, shake off excess water, and remove the tough stems from the leaves.
- 3. Fill four nice glasses with the arugula and top with the marinated crayfish cocktail. Sprinkle everything with fresh parsley and garnish with a wedge of lemon.
