  1. 1. Stir the mayonnaise together with the ketchup, cognac, tomato paste, lemon juice, and horseradish until smooth. Season the sauce to taste with Worcestershire sauce, a pinch of salt, and some cayenne pepper.
  2. 2. Wash the crayfish thoroughly and pat them dry with a kitchen towel. Then mix the crayfish pieces in a bowl with the prepared sauce. Wash the arugula, shake off excess water, and remove the tough stems from the leaves.
  3. 3. Fill four nice glasses with the arugula and top with the marinated crayfish cocktail. Sprinkle everything with fresh parsley and garnish with a wedge of lemon.
