  1. 1. Thoroughly wash the duck inside and out.
  2. 2. Remove the liver and set it aside.
  3. 3. Pat the duck dry with a kitchen towel.
  4. 4. Season the inside of the duck with salt and pepper.
  5. 5. Mix the fruit cereal with two eggs.
  6. 6. Fry the two diced bread rolls in one tablespoon of ghee.
  7. 7. Let the bread rolls cool down.
  8. 8. Add the cooled bread cubes to the cereal-egg mixture.
  9. 9. Roughly chop the liver and mix it in.
  10. 10. Finally season the filling with salt and pepper.
  11. 11. Stuff the duck with the mixture.
  12. 12. Sew up the opening of the duck.
  13. 13. Heat the remaining ghee.
  14. 14. Pour the hot ghee over the duck.
  15. 15. Fry the duck on both sides.
  16. 16. Bring the milk to a boil for the semolina pudding.
  17. 17. Season the milk with pepper and salt.
  18. 18. Stir in the semolina.
  19. 19. Let the mixture boil briefly again.
  20. 20. Whip the two egg whites until stiff.
  21. 21. Finely chop the parsley.
  22. 22. Fold in the egg whites and the parsley into the semolina.
  23. 23. Fill the mixture into four to six lightly buttered ramekins.
  24. 24. Preheat the oven to 220 degrees (gas mark 4).
  25. 25. Bake the ramekins in the oven for 20 minutes.
  26. 26. Cover the ramekins with parchment paper after 10 minutes.
  27. 27. Remove the ramekins from the oven after baking.
  28. 28. Let the semolina puddings cool down.
  29. 29. Unmold the puddings from the ramekins.
  30. 30. Slice the puddings crosswise.
  31. 31. Fry the semolina slices in ghee briefly on both sides.
