🍽️ Duck with Potato Rings

Ingredients
- 1 duck (approx. 1.6 kg heavy)
- 500 g fruit muesli
- 1 savoy cabbage (approx. 800 g heavy)
- 2 eggs
- 2 egg whites
- 2 rolls
- 1 bunch soup vegetables
- 1 onion
- 1 jar poultry stock
- 0.25 l red wine
- 0.25 l milk
- 90 g semolina
- 2 tbsp ghee
- 30 g ice-cold butter
- 1 parsley
- salt
- white pepper
- grated nutmeg
Instructions
- 1. Thoroughly wash the duck inside and out.
- 2. Remove the liver and set it aside.
- 3. Pat the duck dry with a kitchen towel.
- 4. Season the inside of the duck with salt and pepper.
- 5. Mix the fruit cereal with two eggs.
- 6. Fry the two diced bread rolls in one tablespoon of ghee.
- 7. Let the bread rolls cool down.
- 8. Add the cooled bread cubes to the cereal-egg mixture.
- 9. Roughly chop the liver and mix it in.
- 10. Finally season the filling with salt and pepper.
- 11. Stuff the duck with the mixture.
- 12. Sew up the opening of the duck.
- 13. Heat the remaining ghee.
- 14. Pour the hot ghee over the duck.
- 15. Fry the duck on both sides.
- 16. Bring the milk to a boil for the semolina pudding.
- 17. Season the milk with pepper and salt.
- 18. Stir in the semolina.
- 19. Let the mixture boil briefly again.
- 20. Whip the two egg whites until stiff.
- 21. Finely chop the parsley.
- 22. Fold in the egg whites and the parsley into the semolina.
- 23. Fill the mixture into four to six lightly buttered ramekins.
- 24. Preheat the oven to 220 degrees (gas mark 4).
- 25. Bake the ramekins in the oven for 20 minutes.
- 26. Cover the ramekins with parchment paper after 10 minutes.
- 27. Remove the ramekins from the oven after baking.
- 28. Let the semolina puddings cool down.
- 29. Unmold the puddings from the ramekins.
- 30. Slice the puddings crosswise.
- 31. Fry the semolina slices in ghee briefly on both sides.
