  1. 1. Beat butter, a pinch of salt, applesauce, and sugar with a mixer until the mixture is fluffy and airy.
  2. 2. Separate the eggs: add the egg yolks and beat them into the butter-sugar mixture until creamy.
  3. 3. Mix flour, baking powder, cocoa, and the remaining chocolate in a separate bowl.
  4. 4. Gently fold this dry mixture into the egg mixture.
  5. 5. Pour in the milk slowly until the batter is smooth and creamy.
  6. 6. If the batter seems too thick, add a splash more milk.
  7. 7. Beat the egg whites until stiff and gently fold them into the batter to keep it airy.
  8. 8. Pour the batter into a springform pan (grease the pan only if it is not non-stick).
  9. 9. Bake the cake in a preheated oven at 180 °C (convection 160 °C; gas mark 2–3) for about 60 minutes.
  10. 10. Remove the cake and let it cool completely on a wire rack.
  11. 11. Melt the dark chocolate coating (couverture) over a bowl of hot water (bain-marie).
  12. 12. Pour the melted chocolate over the cooled cake until it is completely covered.
  13. 13. Garnish the cake with chocolate shavings.
