🍰 Fluffy Chocolate Cake with Chocolate Glaze

Ingredients
- 200 g room-temperature butter
- 1 pinch salt
- 125 g applesauce (no sugar)
- 100 g raw cane sugar
- 5 eggs
- 500 g wheat flour Type 1050
- 3 tsp baking powder
- 100 g grated dark chocolate
- 3 tbsp cocoa powder
- 250 ml milk (1.5% fat)
- 250 g dark chocolate coating
- chocolate shavings
Instructions
- 1. Beat butter, a pinch of salt, applesauce, and sugar with a mixer until the mixture is fluffy and airy.
- 2. Separate the eggs: add the egg yolks and beat them into the butter-sugar mixture until creamy.
- 3. Mix flour, baking powder, cocoa, and the remaining chocolate in a separate bowl.
- 4. Gently fold this dry mixture into the egg mixture.
- 5. Pour in the milk slowly until the batter is smooth and creamy.
- 6. If the batter seems too thick, add a splash more milk.
- 7. Beat the egg whites until stiff and gently fold them into the batter to keep it airy.
- 8. Pour the batter into a springform pan (grease the pan only if it is not non-stick).
- 9. Bake the cake in a preheated oven at 180 °C (convection 160 °C; gas mark 2–3) for about 60 minutes.
- 10. Remove the cake and let it cool completely on a wire rack.
- 11. Melt the dark chocolate coating (couverture) over a bowl of hot water (bain-marie).
- 12. Pour the melted chocolate over the cooled cake until it is completely covered.
- 13. Garnish the cake with chocolate shavings.
