  1. 1. Beat the butter together with the powdered sugar and the egg in a bowl until creamy.
  2. 2. Add the flour and knead it quickly into a smooth dough.
  3. 3. Wrap the dough in cling film and place it in the refrigerator to chill.
  4. 4. Put the butter, sugar, honey, and cream for the filling into a saucepan.
  5. 5. Heat the mixture while stirring constantly until it comes to a boil.
  6. 6. Stir in the chopped almonds, slivered almonds, and candied fruits.
  7. 7. Remove the saucepan from the heat and let the mixture cool down.
  8. 8. Dust a work surface with flour and roll out the dough to a thickness of about 0.5 cm.
  9. 9. Cut out circles with a diameter of approx. 5 cm.
  10. 10. Place the dough circles on a baking sheet lined with baking paper.
  11. 11. Distribute the cooled almond caramel mixture evenly over the dough circles.
  12. 12. Preheat the oven to 160 °C fan (convection).
  13. 13. Bake the cookies for approx. 15 to 20 minutes in the preheated oven.
  14. 14. Take the Florentine cookies out of the oven and let them cool on the tray.
