🍰 Crunchy Florentine Cookies

Ingredients
- 100 g soft butter
- 50 g powdered sugar
- 1 egg
- 200 g flour
- flour (for working)

- 30 g butter
- 4 tbsp sugar
- 1 tbsp honey
- 70 ml whipping cream
- 100 g almond kernels (sliced)
- 40 g almond kernels (chopped)
- 75 g mixed candied dried fruit (chopped)
Instructions
- 1. Beat the butter together with the powdered sugar and the egg in a bowl until creamy.
- 2. Add the flour and knead it quickly into a smooth dough.
- 3. Wrap the dough in cling film and place it in the refrigerator to chill.
- 4. Put the butter, sugar, honey, and cream for the filling into a saucepan.
- 5. Heat the mixture while stirring constantly until it comes to a boil.
- 6. Stir in the chopped almonds, slivered almonds, and candied fruits.
- 7. Remove the saucepan from the heat and let the mixture cool down.
- 8. Dust a work surface with flour and roll out the dough to a thickness of about 0.5 cm.
- 9. Cut out circles with a diameter of approx. 5 cm.
- 10. Place the dough circles on a baking sheet lined with baking paper.
- 11. Distribute the cooled almond caramel mixture evenly over the dough circles.
- 12. Preheat the oven to 160 °C fan (convection).
- 13. Bake the cookies for approx. 15 to 20 minutes in the preheated oven.
- 14. Take the Florentine cookies out of the oven and let them cool on the tray.
