  2. 2. Pat the meat completely dry with a kitchen towel.
  3. 3. Remove visible fat and sinew from the meat.
  4. 4. Cut the beef into strips approximately 5 mm thick.
  5. 5. Peel the garlic cloves.
  6. 6. Mix the yogurt with the oil and the spice mix in a bowl.
  7. 7. Press the garlic directly into the yogurt mixture.
  8. 8. Coat the beef strips generously with the marinade.
  9. 9. Cover the dish with aluminum foil.
  10. 10. Place the dish in the refrigerator overnight to marinate.
  11. 11. Toast the sesame seeds in a dry pan until golden brown.
  12. 12. Remove the sesame seeds from the pan.
  13. 13. Add the sesame seeds along with the olive oil to the yogurt for the dip.
  14. 14. Mix all dip ingredients thoroughly together.
  15. 15. Season the dip with salt, pepper, and a little lemon juice.
  16. 16. Thread the marinated beef onto the skewers.
  17. 17. Preheat the grill.
  18. 18. Place a piece of aluminum foil on the grill grate.
  19. 19. Place the skewers on the aluminum foil.
  20. 20. Grill the skewers for approximately 8 to 10 minutes.
  21. 21. Brush the skewers repeatedly with the remaining marinade during cooking.
  22. 22. Serve the finished skewers together with the yogurt dip.
