🍳 Herb Meat Salad

Ingredients
- 70 g small gherkins (3 small gherkins)
- 1 spring onion
- 100 g yogurt (1.5% fat)
- 2 tbsp salad cream
- 1 tsp mustard
- salt
- pepper
- 1 bunch chives
- 0.5 bunch flat-leaf parsley
- 200 g reduced-fat meat sausage (e.g. poultry sausage)
- 90 g rye wholemeal bread (2 slices)
- lettuce leaves or cucumber (to taste)
Instructions
- 1. Cut the gherkins into thin strips.
- 2. Clean the spring onions and wash them.
- 3. Slice the spring onions into thin rings.
- 4. Whisk the yogurt with the salad cream.
- 5. Add the mustard to the yogurt mixture.
- 6. Season the sauce with a little salt and pepper.
- 7. Stir the spring onion rings into the sauce.
- 8. Stir the gherkin strips into the sauce.
- 9. Wash the chives and the parsley.
- 10. Shake the herbs dry.
- 11. Cut the chives into fine rings.
- 12. Pluck the parsley leaves from the stems.
- 13. Finely chop the parsley leaves.
- 14. Stir the herbs into the sauce.
- 15. Remove the casing from the meat sausage.
- 16. Slice the meat sausage into thin strips.
- 17. Mix the sausage strips with the sauce.
- 18. Season the salad with salt and pepper to taste.
- 19. Let the meat salad marinate for 10 minutes.
- 20. Place lettuce leaves or fresh cucumber slices on the bread slices.
- 21. Place the meat salad on the prepared bread slices.
