🍽️ Lamb Meat Rolls with Onions

Ingredients
- 2 red onions
- 6 tbsp olive oil
- 2 tsp smoked paprika powder (Spanish specialty)
- 350 g lamb fillet
Instructions
- 1. Peel the onions and cut them in half.
- 2. Slice the onion halves into very thin rings.
- 3. Mix the oil and paprika powder together in a small bowl.
- 4. Rinse the lamb fillet under cold water.
- 5. Pat the meat dry with a kitchen towel.
- 6. Cut the fillet into 16 thin slices.
- 7. Place the meat slices on a large piece of cling film.
- 8. Cover the meat slices with a second piece of cling film.
- 9. Pound the meat flat using a meat mallet or a heavy saucepan.
- 10. Carefully remove the top layer of cling film.
- 11. Brush the meat slices with half of the paprika-oil mixture.
- 12. Distribute the onion rings evenly over the meat.
- 13. Roll each meat slice tightly into a small roll.
- 14. Thread four meat rolls onto each skewer.
- 15. Place the skewers on an aluminum foil tray.
- 16. Brush the rolls all around with the remaining paprika-oil mixture.
- 17. Grill the meat rolls for about 6 to 8 minutes on each side.
