🍽️ Crispy Meatballs with Fresh Pepper Dip

Ingredients
- 1 clove garlic
- 1 avocado
- 150 g sour cream
- 3 tbsp yogurt
- 0.5 lime (juice)
- salt
- 1 pinch ground coriander
- 2 slices whole wheat toast
- 1 tomato
- 1 large red bell pepper
- 1 small yellow bell pepper
- 1 shallot
- 4 tbsp rapeseed oil
- 600 g minced beef
- 1 egg
- breadcrumbs (as needed)
- cayenne pepper
- paprika powder (sweet)
- coriander leaves (for garnish)
Instructions
- 1. Peel the garlic clove.
- 2. Halve the avocado and remove the pit.
- 3. Peel the avocado and place the flesh in a bowl.
- 4. Add the sour cream, yogurt, garlic, and lime juice to the avocado.
- 5. Blend the mixture until smooth.
- 6. Season the dip with salt and fresh coriander.
- 7. Soak the toast slice in a little lukewarm water.
- 8. Blanch the tomato briefly in boiling water (cook briefly in boiling water).
- 9. Shock the tomato to stop the cooking process.
- 10. Peel the skin off the tomato.
- 11. Remove the seeds and the stem attachment.
- 12. Dice the tomato flesh finely.
- 13. Wash the two bell peppers.
- 14. Remove the seeds and the inside of the peppers.
- 15. Dice the peppers finely.
- 16. Set aside some yellow pepper cubes and tomato cubes.
- 17. Peel the shallot.
- 18. Finely chop the shallot.
- 19. Heat 1-2 teaspoons of oil in a pan.
- 20. Sauté the shallot and the remaining pepper cubes for 2-3 minutes.
- 21. Remove the vegetable mixture from the pan.
- 22. Add the sautéed vegetables to the minced meat.
- 23. Squeeze the soaked toast.
- 24. Add the squeezed toast to the minced meat.
- 25. Add the tomato cubes to the minced meat.
- 26. Add the egg to the minced meat.
- 27. Knead everything into a smooth meat dough.
- 28. Form small meatballs from the dough.
- 29. Fry the meatballs until golden brown.
- 30. Place the reserved pepper and tomato cubes on the dip.
- 31. Sprinkle some paprika powder over the dip.
- 32. Garnish the meatballs with coriander greens.
- 33. Serve the meatballs with the dip.
