Ingredients
- 30 g puff pastry (frozen) or ready-made salty shortcrust pastry without egg, e.g. for quiche
- 200 g pork fillet
- 2 shallots
- 1 clove of garlic
- 1 egg
- 1 egg yolk
- 2 tbsp vegetable oil
- flour (for the worktop)
- 100 g spinach
- allspice powder
- salt
- pepper (from the mill)
Instructions
- 1. Peel the shallots and the garlic.
- 2. Finely chop the shallots and the garlic.
- 3. Wash the spinach.
- 4. Remove the tough stems from the spinach.
- 5. Let the spinach drain well.
- 6. Chop the spinach coarsely.
- 7. Grind the pork fillet through a meat grinder.
- 8. Set the meat grinder to the finest setting.
- 9. Mix the ground pork with the egg.
- 10. Add the chopped spinach to the meat mixture.
- 11. Add two to three pinches of allspice powder.
- 12. Season the mixture with salt.
- 13. Season the mixture with pepper.
- 14. Mix all ingredients well.
- 15. Heat oil in a pan.
- 16. Fry the meat mixture over medium heat.
- 17. Fry the meat mixture for two to three minutes.
- 18. Stir while frying.
- 19. Fry the meat mixture until it is crumbly.
- 20. Let the meat mixture cool down.
- 21. Dust the work surface with flour.
- 22. Roll out the dough thinly.
- 23. Cut out four round slices from the dough.
- 24. Ensure a diameter of twelve centimeters.
- 25. Use a cutter or an inverted bowl.
- 26. Preheat the oven to 180 degrees.
- 27. Distribute the meat mixture onto two dough circles.
- 28. Slightly pile the meat mixture in the center.
- 29. Leave a wide border free.
- 30. Moisten the dough border with a little water.
- 31. Place the remaining two dough circles on top of the meat.
- 32. Press the edges together firmly with your fingers.
- 33. Mix the egg yolk with a little water.
- 34. Brush the surface of the pasties with the egg yolk mixture.
- 35. Place the pasties on a baking sheet lined with baking paper.
- 36. Bake the pasties in the hot oven.
- 37. Bake the pasties for twenty to twenty-five minutes.
- 38. Bake the pasties until they are golden brown.
- 39. Serve the pasties warm.
