  2. 2. Wash the soup vegetables thoroughly.
  3. 3. Peel the carrots.
  4. 4. Peel the celery.
  5. 5. Peel the parsley root, if you have one.
  6. 6. Wash the leek under running water.
  7. 7. Cut the leek into large pieces.
  8. 8. Cut the remaining vegetables into large pieces.
  9. 9. Cut the onion into large pieces.
  10. 10. Place the vegetables in a large pot.
  11. 11. Add the minced meat to the pot.
  12. 12. Pour 1.5 liters of water into the pot.
  13. 13. Add 1/2 teaspoon of salt to the pot.
  14. 14. Add the spices to the pot.
  15. 15. Heat the mixture over medium heat.
  16. 16. Bring the broth to a boil.
  17. 17. Stir the broth gently with a wooden spoon.
  18. 18. Distribute the minced meat evenly in the broth.
  19. 19. Reduce the heat once the broth is boiling.
  20. 20. Place the lid halfway on the pot.
  21. 21. Simmer the broth for 30 minutes over low heat.
  22. 22. Remove the rising foam with a skimmer.
  23. 23. Do not stir the broth anymore while simmering.
  24. 24. Pour the finished broth through a fine sieve.
  25. 25. Defat the broth, if necessary, using a fat separator.
  26. 26. Season the broth with a little salt.
