🍽️ Homemade Meat Broth

Ingredients
- 1 onion
- 300 g small bunch of soup vegetables (1 small bunch of soup vegetables)
- 125 g ground beef
- salt
- 0.5 tsp peppercorns
- 1 bay leaf
- 1 clove
- 2 juniper berries
Instructions
- 1. Peel the onion.
- 2. Wash the soup vegetables thoroughly.
- 3. Peel the carrots.
- 4. Peel the celery.
- 5. Peel the parsley root, if you have one.
- 6. Wash the leek under running water.
- 7. Cut the leek into large pieces.
- 8. Cut the remaining vegetables into large pieces.
- 9. Cut the onion into large pieces.
- 10. Place the vegetables in a large pot.
- 11. Add the minced meat to the pot.
- 12. Pour 1.5 liters of water into the pot.
- 13. Add 1/2 teaspoon of salt to the pot.
- 14. Add the spices to the pot.
- 15. Heat the mixture over medium heat.
- 16. Bring the broth to a boil.
- 17. Stir the broth gently with a wooden spoon.
- 18. Distribute the minced meat evenly in the broth.
- 19. Reduce the heat once the broth is boiling.
- 20. Place the lid halfway on the pot.
- 21. Simmer the broth for 30 minutes over low heat.
- 22. Remove the rising foam with a skimmer.
- 23. Do not stir the broth anymore while simmering.
- 24. Pour the finished broth through a fine sieve.
- 25. Defat the broth, if necessary, using a fat separator.
- 26. Season the broth with a little salt.
