  1. 1. Peel the onion and the garlic.
  2. 2. Finely chop the onion and the garlic.
  3. 3. Add the chopped onion and garlic along with the fresh coriander to the minced meat.
  4. 4. Season the meat mixture with cumin, salt, and pepper.
  5. 5. Shape the mixture into small, uniform balls.
  6. 6. Pour boiling water over the tomatoes.
  7. 7. Immediately shock the tomatoes with cold water.
  8. 8. Remove the skin from the tomatoes.
  9. 9. Cut the peeled tomatoes into quarters.
  10. 10. Remove the seeds from the tomato quarters.
  11. 11. Dice the seeded tomatoes.
  12. 12. Peel the sweet potatoes.
  13. 13. Wash the peeled sweet potatoes.
  14. 14. Coarsely grate the sweet potatoes.
  15. 15. Heat oil in the tajine on the stovetop.
  16. 16. Fry the meatballs in the hot oil on all sides.
  17. 17. Remove the browned meatballs from the tajine and set them aside.
  18. 18. Add the diced tomatoes to the tajine.
  19. 19. Add the grated sweet potatoes to the tajine.
  20. 20. Pour the broth into the tajine.
  21. 21. Season the vegetable and broth mixture with salt and pepper.
  22. 22. Add paprika powder to the mixture.
  23. 23. Add cumin to the mixture.
  24. 24. Place the browned meatballs back into the tajine.
  25. 25. Cover the tajine.
  26. 26. Simmer the dish on low heat for about 20 minutes.
  27. 27. Taste the tajine one last time before serving.
  28. 28. Serve the tajine with rice on the side if desired.
