🍽️ Spiced Meatball Tajine

Ingredients
- 1 red onion
- 1 clove garlic
- 2 tbsp fresh chopped cilantro
- 600 g minced meat (lamb)
- cumin (ground)
- salt
- pepper (from the mill)
- 800 g tomatoes
- 300 g sweet potatoes
- 2 tbsp olive oil
- 150 ml meat broth
- 1 tsp paprika powder (hot)
Instructions
- 1. Peel the onion and the garlic.
- 2. Finely chop the onion and the garlic.
- 3. Add the chopped onion and garlic along with the fresh coriander to the minced meat.
- 4. Season the meat mixture with cumin, salt, and pepper.
- 5. Shape the mixture into small, uniform balls.
- 6. Pour boiling water over the tomatoes.
- 7. Immediately shock the tomatoes with cold water.
- 8. Remove the skin from the tomatoes.
- 9. Cut the peeled tomatoes into quarters.
- 10. Remove the seeds from the tomato quarters.
- 11. Dice the seeded tomatoes.
- 12. Peel the sweet potatoes.
- 13. Wash the peeled sweet potatoes.
- 14. Coarsely grate the sweet potatoes.
- 15. Heat oil in the tajine on the stovetop.
- 16. Fry the meatballs in the hot oil on all sides.
- 17. Remove the browned meatballs from the tajine and set them aside.
- 18. Add the diced tomatoes to the tajine.
- 19. Add the grated sweet potatoes to the tajine.
- 20. Pour the broth into the tajine.
- 21. Season the vegetable and broth mixture with salt and pepper.
- 22. Add paprika powder to the mixture.
- 23. Add cumin to the mixture.
- 24. Place the browned meatballs back into the tajine.
- 25. Cover the tajine.
- 26. Simmer the dish on low heat for about 20 minutes.
- 27. Taste the tajine one last time before serving.
- 28. Serve the tajine with rice on the side if desired.
