🍽️ Homemade Fleckern Noodles with Caramelized Cabbage

Ingredients
- 300 g flour
- 3 eggs
- 1 tsp olive oil
- salt
- 400 g pointed cabbage (or white cabbage)
- 3 tbsp olive oil
- 1 tbsp clarified butter
- 1 tsp powdered sugar
- 1 tbsp wine vinegar
- 50 ml dry white wine
- 100 ml vegetable broth
- salt
- pepper (from the mill)
- nutmeg
- ground caraway
- 2 tbsp freshly chopped parsley
- 100 g sour cream
Instructions
- 1. Combine flour, eggs, oil, and half a teaspoon of salt in a bowl.
- 2. Knead the ingredients into a smooth and silky dough.
- 3. Shape the dough into a ball.
- 4. Wrap the dough ball in cling film.
- 5. Let the dough rest for about 30 minutes.
- 6. Roll the dough into thin sheets using a pasta machine.
- 7. Alternatively, roll the dough in portions very thinly on a floured work surface.
- 8. Cut the dough into squares with a side length of about 3 centimeters.
- 9. Loosely distribute the noodle squares on a floured baking sheet.
- 10. Let the noodles dry for about 1 hour so they do not stick together.
- 11. Wash the cabbage and halve it.
- 12. Remove the core and coarse leaf ribs.
- 13. First cut the cabbage lengthwise into strips.
- 14. Then cut the strips crosswise into pieces that match the size of the noodle squares.
- 15. Let the cut cabbage drain in a sieve.
- 16. Heat oil and ghee in a pan.
- 17. Sauté the cabbage in it for 1 to 2 minutes.
- 18. Dust the cabbage with powdered sugar.
- 19. Let the sugar caramelize slightly.
- 20. Deglaze the cabbage with vinegar.
- 21. Add wine and broth.
- 22. Simmer the cabbage covered at medium heat for about 10 minutes.
- 23. The cabbage should remain slightly al dente.
- 24. Season the cabbage with salt, pepper, nutmeg, and a little cumin.
- 25. Cook the noodle squares in plenty of salted water for 4 to 5 minutes al dente.
- 26. Drain the noodles and let them drain well.
- 27. Mix the noodles with the parsley and sour cream.
- 28. Toss the noodle mixture under the cabbage.
- 29. Finally, taste the dish.
- 30. Serve the dish warm.
