🍽️ Creamy Broccoli Flan

Ingredients
- 600 g broccoli
- 1 onion
- 1 tbsp butter
- 70 g crème fraîche
- 2 eggs
- 2 egg yolks
- salt
- pepper (from the mill)
- 1 pinch ground coriander
- butter (the molds)
Instructions
- 1. Wash the broccoli thoroughly.
- 2. Separate the florets from the stems.
- 3. Peel the tough skin off the stems.
- 4. Dice the stems into small cubes.
- 5. Peel the onion.
- 6. Finely chop the onion.
- 7. Heat butter in a pot.
- 8. Sauté the onions until translucent.
- 9. Add all the broccoli (florets and cubes) to the pot.
- 10. Sauté the broccoli briefly.
- 11. Pour in half a cup of water.
- 12. Set aside a few small broccoli florets for garnish.
- 13. Cover the pot.
- 14. Simmer the rest over medium heat for about 8 minutes.
- 15. Puree the cooked broccoli mixture.
- 16. Stir in the crème fraîche.
- 17. Whisk in the whole eggs.
- 18. Whisk in the egg yolks.
- 19. Season the mixture with salt.
- 20. Season the mixture with pepper.
- 21. Season the mixture with coriander.
- 22. Grease eight small molds or cups with butter.
- 23. Fill the molds with the broccoli cream.
- 24. Cover the molds with buttered aluminum foil.
- 25. Place the molds into a large pot.
- 26. Pour boiling water into the pot.
- 27. Fill the water until just below the rim of the molds.
- 28. Bring the water in the pot to a boil.
- 29. Reduce the heat to low.
- 30. Let the flans set covered for 30 minutes.
- 31. Ensure the water does not boil.
- 32. Garnish the finished flans with the reserved broccoli florets.
- 33. Serve the flans.
