  1. 1. Wash the broccoli thoroughly.
  2. 2. Separate the florets from the stems.
  3. 3. Peel the tough skin off the stems.
  4. 4. Dice the stems into small cubes.
  5. 5. Peel the onion.
  6. 6. Finely chop the onion.
  7. 7. Heat butter in a pot.
  8. 8. Sauté the onions until translucent.
  9. 9. Add all the broccoli (florets and cubes) to the pot.
  10. 10. Sauté the broccoli briefly.
  11. 11. Pour in half a cup of water.
  12. 12. Set aside a few small broccoli florets for garnish.
  13. 13. Cover the pot.
  14. 14. Simmer the rest over medium heat for about 8 minutes.
  15. 15. Puree the cooked broccoli mixture.
  16. 16. Stir in the crème fraîche.
  17. 17. Whisk in the whole eggs.
  18. 18. Whisk in the egg yolks.
  19. 19. Season the mixture with salt.
  20. 20. Season the mixture with pepper.
  21. 21. Season the mixture with coriander.
  22. 22. Grease eight small molds or cups with butter.
  23. 23. Fill the molds with the broccoli cream.
  24. 24. Cover the molds with buttered aluminum foil.
  25. 25. Place the molds into a large pot.
  26. 26. Pour boiling water into the pot.
  27. 27. Fill the water until just below the rim of the molds.
  28. 28. Bring the water in the pot to a boil.
  29. 29. Reduce the heat to low.
  30. 30. Let the flans set covered for 30 minutes.
  31. 31. Ensure the water does not boil.
  32. 32. Garnish the finished flans with the reserved broccoli florets.
  33. 33. Serve the flans.
