🍽️ Crispy Flammkuchen with Caramelized Onions and Sardines

Ingredients
- 0.5 cube yeast (21 g)
- 20 g lard
- 1 tsp salt
- 450 g flour
- 600 g onions
- 2 garlic cloves
- 2 sprigs thyme
- 2 tbsp olive oil
- 1 bay leaf
- salt
- pepper (from the mill)
- flour (for the work surface)
- 6 anchovy fillets
Instructions
- 1. Dissolve the yeast, lard, and salt in 250 milliliters of lukewarm water.
- 2. Knead the flour into the liquid until the dough easily pulls away from the sides of the bowl.
- 3. If necessary, add a little more water or flour to achieve the right consistency.
- 4. Let the dough rise in a warm place for at least 45 minutes.
- 5. Peel the onions and slice them into thin strips.
- 6. Peel the garlic and chop it finely.
- 7. Strip the thyme leaves from the stems.
- 8. Preheat the oven to 220 degrees Celsius fan-assisted.
- 9. Sauté the onion strips in hot olive oil until translucent.
- 10. Add the bay leaf and thyme to the onion mixture.
- 11. Season the mixture with salt and pepper to taste.
- 12. Roll out the dough on a floured surface into a round shape.
- 13. Place the dough on a baking sheet lined with baking paper.
- 14. Spread the warm onion mixture evenly over the dough.
- 15. Top the flammkuchen with the sardines.
- 16. Bake the flammkuchen in the preheated oven for about 25 minutes.
