  1. 1. Put flour, oil, 250 milliliters of water, and half a teaspoon of salt into a large bowl.
  2. 2. Knead the ingredients with the dough hooks of a hand mixer until you have a smooth dough.
  3. 3. Place a sheet of baking paper on a work surface.
  4. 4. Roll out the dough on the baking paper so that it matches the size of your baking tray.
  5. 5. Carefully lift the dough with the baking paper and place it onto the baking tray.
  6. 6. Put peppercorns into a mortar.
  7. 7. Crush the peppercorns coarsely with the pestle.
  8. 8. Mix cream cheese with the crushed pepper and a pinch of salt.
  9. 9. Spread the cream cheese mixture evenly over the Flammkuchen dough.
  10. 10. Preheat the oven to 225 degrees Celsius (200 degrees Celsius with fan or gas level 3 to 4).
  11. 11. Place the tray on the lowest rack and bake the Flammkuchen for about 12 minutes.
  12. 12. Wash the arugula under running water.
  13. 13. Shake the arugula dry or pat it gently with a kitchen towel.
  14. 14. Cut the ham into coarse pieces.
  15. 15. Take the Flammkuchen out of the oven.
  16. 16. Lift the Flammkuchen off the tray along with the baking paper.
  17. 17. Top the Flammkuchen with the arugula and the ham pieces.
  18. 18. Cut the Flammkuchen into eight equal pieces.
  19. 19. Serve the dish immediately.
