🍽️ Crispy Flammkuchen with Arugula and Ham

Ingredients
- 400 g wheat wholemeal flour
- 40 g olive oil (4 tbsp)
- salt
- 1 tsp black peppercorns
- 200 g cream cheese (13 % fat)
- 40 g arugula
- 120 g turkey ham (paper-thin slices)
Instructions
- 1. Put flour, oil, 250 milliliters of water, and half a teaspoon of salt into a large bowl.
- 2. Knead the ingredients with the dough hooks of a hand mixer until you have a smooth dough.
- 3. Place a sheet of baking paper on a work surface.
- 4. Roll out the dough on the baking paper so that it matches the size of your baking tray.
- 5. Carefully lift the dough with the baking paper and place it onto the baking tray.
- 6. Put peppercorns into a mortar.
- 7. Crush the peppercorns coarsely with the pestle.
- 8. Mix cream cheese with the crushed pepper and a pinch of salt.
- 9. Spread the cream cheese mixture evenly over the Flammkuchen dough.
- 10. Preheat the oven to 225 degrees Celsius (200 degrees Celsius with fan or gas level 3 to 4).
- 11. Place the tray on the lowest rack and bake the Flammkuchen for about 12 minutes.
- 12. Wash the arugula under running water.
- 13. Shake the arugula dry or pat it gently with a kitchen towel.
- 14. Cut the ham into coarse pieces.
- 15. Take the Flammkuchen out of the oven.
- 16. Lift the Flammkuchen off the tray along with the baking paper.
- 17. Top the Flammkuchen with the arugula and the ham pieces.
- 18. Cut the Flammkuchen into eight equal pieces.
- 19. Serve the dish immediately.
