🍽️ Crispy Flammkuchen with Bell Peppers, Chorizo, and Olives

Ingredients
- 500 g wheat flour Type 1700
- 1 tsp salt
- 21 g yeast (0.5 cube)
- 2 red bell peppers
- 2 mild, red chili peppers
- 1 onion
- 1 garlic clove
- 200 g sour cream
- 1 tbsp lemon juice
- pepper
- 100 g chorizo
- 150 g black olives (pitted)
- 100 g serrano ham
Instructions
- 1. Mix the flour with the salt in a large bowl.
- 2. Dissolve the yeast in about 200 milliliters of lukewarm water.
- 3. Pour the yeast water into the flour mixture.
- 4. Knead everything into a smooth dough using the dough hooks of a hand mixer.
- 5. Add a little more flour or water if the dough is too sticky or too dry.
- 6. Knead the dough briefly by hand.
- 7. Shape the dough into a ball.
- 8. Place the dough ball back into the bowl.
- 9. Cover the bowl.
- 10. Let the dough rise in a warm place for about 1 hour.
- 11. Wash the bell peppers under running water.
- 12. Halve the bell peppers lengthwise.
- 13. Remove the seeds and white inner membranes from the bell peppers.
- 14. Cut the flesh of the bell pepper into thin strips.
- 15. Wash the chili peppers under running water.
- 16. Remove the stem from the chili peppers.
- 17. Cut the chili peppers lengthwise.
- 18. Remove the seeds from the chili peppers.
- 19. Slice the chili peppers into thin rings.
- 20. Peel the garlic.
- 21. Press the garlic into the sour cream.
- 22. Season the sour cream with lemon juice.
- 23. Season the sour cream with salt.
- 24. Season the sour cream with pepper.
- 25. Slice the chorizo into thin rounds.
- 26. Drain the olives in a colander.
- 27. Let the olives drip dry for a moment.
- 28. Divide the finished dough into four equal pieces.
- 29. Dust a work surface with a little flour.
- 30. Roll each piece of dough into an elongated flatbread.
- 31. Spread the sour cream thinly over the flatbreads.
- 32. Sprinkle some of the onions over the sour cream.
- 33. Top the dough with the chorizo slices.
- 34. Distribute the bell pepper strips over the flammkuchen.
- 35. Distribute the chili pepper rings over the flammkuchen.
- 36. Distribute the olives over the flammkuchen.
- 37. Preheat the oven to 220 degrees Celsius (convection: 200 degrees Celsius; gas: level 3 to 4).
- 38. Bake the flammkuchen in the preheated oven for about 15 minutes.
- 39. Remove the flammkuchen from the oven when the edges are crispy.
- 40. Shred the ham into small pieces.
- 41. Let the baked flammkuchen cool down briefly.
- 42. Top the flammkuchen with the ham pieces.
- 43. Serve the flammkuchen immediately.
