  1. 1. Peel the potatoes and slice them thinly.
  2. 2. Wash the arugula, remove any tough stems, and shake it dry.
  3. 3. Heat an uncoated frying pan and add a small splash of oil.
  4. 4. Place one tortilla into the hot pan.
  5. 5. Spread a quarter of the potato slices and some arugula over the tortilla.
  6. 6. Sprinkle cheese over the top and season with salt and pepper.
  7. 7. Place a second tortilla on top and press it down gently.
  8. 8. Fry the sandwich for one to two minutes until golden brown.
  9. 9. Support the sandwich with a plate and flip it over in the pan.
  10. 10. Fry the other side until golden brown and the cheese has melted.
  11. 11. Repeat the process with the remaining ingredients to make four more tortillas.
  12. 12. Cut the finished tortillas into quarters and serve.
