🍽️ Crispy Cheese & Arugula Tortillas

Ingredients
- 600 g boiled potatoes
- 250 g arugula
- 8 tortilla wraps
- 100 g grated cheese (e.g. cheddar)
- salt
- pepper (from the mill)
- 4 tbsp oil
Instructions
- 1. Peel the potatoes and slice them thinly.
- 2. Wash the arugula, remove any tough stems, and shake it dry.
- 3. Heat an uncoated frying pan and add a small splash of oil.
- 4. Place one tortilla into the hot pan.
- 5. Spread a quarter of the potato slices and some arugula over the tortilla.
- 6. Sprinkle cheese over the top and season with salt and pepper.
- 7. Place a second tortilla on top and press it down gently.
- 8. Fry the sandwich for one to two minutes until golden brown.
- 9. Support the sandwich with a plate and flip it over in the pan.
- 10. Fry the other side until golden brown and the cheese has melted.
- 11. Repeat the process with the remaining ingredients to make four more tortillas.
- 12. Cut the finished tortillas into quarters and serve.
