  1. 1. Grind the wheat very finely.
  2. 2. Mix the finely ground wheat flour in a bowl with the white flour and the salt.
  3. 3. Make a well in the center of the flour mixture.
  4. 4. Pour approx. 300 ml of lukewarm water into the well, spoonful by spoonful.
  5. 5. Knead the water into the dough from the center outwards until a smooth dough forms.
  6. 6. Knead the oil thoroughly into the dough.
  7. 7. Cover the bowl and let the dough rest in a warm place for approx. 40 minutes.
  8. 8. Divide the dough into 12 to 15 equal-sized balls.
  9. 9. Dust the work surface with flour.
  10. 10. Roll out each dough ball into a flatbread of 16 to 18 cm in diameter.
  11. 11. Cook the flatbreads without fat in a large pan.
  12. 12. Fry each flatbread for approx. 1 to 2 minutes per side.
  13. 13. Alternatively, you can bake the flatbreads on a hot pizza stone.
