  1. 1. Preheat the oven to 180 degrees Celsius fan-forced.
  2. 2. Brush the small flan molds with some butter.
  3. 3. Rinse the fish under cold water and pat it dry with kitchen paper.
  4. 4. Cut the fish into small pieces.
  5. 5. Place the fish pieces, the egg, the crème fraîche, the lemon zest, a splash of lemon juice, salt, and pepper into a blender.
  6. 6. Blend the mixture in the blender until it forms a fine paste.
  7. 7. Gently fold the finely chopped chives into the fish mixture.
  8. 8. Fill the fish mixture evenly into the prepared molds.
  9. 9. Smooth the surface of the flans with a spoon.
  10. 10. Place the molds into a larger baking dish or roasting pan.
  11. 11. Pour hot water into the outer dish until it reaches about one-third of the height of the molds.
  12. 12. Place the dish in the preheated oven.
  13. 13. Bake the flans for about 30 minutes until they are set.
  14. 14. Stir the sour cream in a bowl until smooth.
  15. 15. Spread a spoonful of sour cream on each plate as a base.
  16. 16. Carefully turn out the finished flans from the molds onto the sour cream.
  17. 17. Place about one tablespoon of caviar on each flan.
  18. 18. Serve the dish immediately.
