🍽️ Classic Fish Flans with Caviar Topping

Ingredients
- soft butter (for the molds)
- 400 g fish fillet (e. g. cod)
- 1 egg
- 2 tbsp crème fraîche
- 0.5 untreated lemon (zest and juice)
- salt
- pepper (from the mill)
- 2 tbsp chive rings
- 100 g sour cream
- 4 tbsp caviar
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Brush the small flan molds with some butter.
- 3. Rinse the fish under cold water and pat it dry with kitchen paper.
- 4. Cut the fish into small pieces.
- 5. Place the fish pieces, the egg, the crème fraîche, the lemon zest, a splash of lemon juice, salt, and pepper into a blender.
- 6. Blend the mixture in the blender until it forms a fine paste.
- 7. Gently fold the finely chopped chives into the fish mixture.
- 8. Fill the fish mixture evenly into the prepared molds.
- 9. Smooth the surface of the flans with a spoon.
- 10. Place the molds into a larger baking dish or roasting pan.
- 11. Pour hot water into the outer dish until it reaches about one-third of the height of the molds.
- 12. Place the dish in the preheated oven.
- 13. Bake the flans for about 30 minutes until they are set.
- 14. Stir the sour cream in a bowl until smooth.
- 15. Spread a spoonful of sour cream on each plate as a base.
- 16. Carefully turn out the finished flans from the molds onto the sour cream.
- 17. Place about one tablespoon of caviar on each flan.
- 18. Serve the dish immediately.
