🍽️ Crispy Crostini with Fresh Fish Tartare

Ingredients
- 1 shallot
- 1 untreated lemon
- 300 g swordfish
- 2 tbsp chive rings
- 1 tsp olive oil
- sea salt
- pepper (from the mill)
- 4 slices ciabatta (or baguette)
Instructions
- 1. Peel the shallot and chop it very finely.
- 2. Wash the lemon under hot water.
- 3. Grate lemon zest (fine strips of the peel).
- 4. Set aside a few zest strips for decoration.
- 5. Finely chop the remaining lemon zest.
- 6. Squeeze out some lemon juice.
- 7. Rinse the swordfish briefly and pat it dry.
- 8. Cut the fish into very small cubes.
- 9. Mix the fish with the chopped lemon zest.
- 10. Add the finely chopped shallot.
- 11. Add the chives.
- 12. Add the oil.
- 13. Season the mixture with the lemon juice.
- 14. Season the mixture with sea salt.
- 15. Pepper the mixture to taste.
- 16. Switch the oven to the grill function.
- 17. Preheat the oven.
- 18. Place the bread slices on a grill rack.
- 19. Toast the bread slices under the grill.
- 20. Cook them until golden brown on both sides.
- 21. Shape the tartare into small mounds (quenelles).
- 22. Place the mounds on the toasted bread.
- 23. Decorate the crostini with the reserved lemon zest.
