  5. 5. Finely chop the remaining lemon zest.
  6. 6. Squeeze out some lemon juice.
  7. 7. Rinse the swordfish briefly and pat it dry.
  8. 8. Cut the fish into very small cubes.
  9. 9. Mix the fish with the chopped lemon zest.
  10. 10. Add the finely chopped shallot.
  11. 11. Add the chives.
  12. 12. Add the oil.
  13. 13. Season the mixture with the lemon juice.
  14. 14. Season the mixture with sea salt.
  15. 15. Pepper the mixture to taste.
  16. 16. Switch the oven to the grill function.
  17. 17. Preheat the oven.
  18. 18. Place the bread slices on a grill rack.
  19. 19. Toast the bread slices under the grill.
  20. 20. Cook them until golden brown on both sides.
  21. 21. Shape the tartare into small mounds (quenelles).
