  2. 2. Pat the fillets completely dry with a kitchen towel.
  3. 3. Cut four of the fillets into small pieces.
  4. 4. Mix the fish pieces with one teaspoon of salt.
  5. 5. Place the bowl with the fish pieces in the freezer compartment for about 30 minutes.
  6. 6. Wash the apples thoroughly.
  7. 7. Quarter the apples and remove the core.
  8. 8. Cut the apple pieces into thin wedges.
  9. 9. Warm four tablespoons of cream in a small saucepan.
  10. 10. Dissolve the saffron threads in the warm cream.
  11. 11. Take the frozen fish pieces out of the freezer.
  12. 12. Process the fish pieces together with the remaining cream in an electric food processor to make a fine paste.
  13. 13. Stir fresh dill leaves into the fish paste.
  14. 14. Add some lemon juice to the fish paste.
  15. 15. Mix the saffron cream into the fish paste.
  16. 16. Season the fish paste lightly with black pepper.
  17. 17. Season the remaining whole fish fillets with salt.
  18. 18. Pepper the remaining fish fillets.
  19. 19. Spread some fish paste onto the skin side of the fillets.
  20. 20. Roll the fillets tightly starting from the thick end.
  21. 21. Heat the butter in a frying pan.
  22. 22. Place the fish rolls into the hot pan.
  23. 23. Deglaze the rolls with wine.
  24. 24. Cover the pan and let the rolls cook for 5 to 7 minutes.
  25. 25. Remove the finished fish rolls from the pan.
  26. 26. Keep the rolls warm for a short time.
  27. 27. Stir the crème fraîche into the wine sauce in the pan.
  28. 28. Add the apple wedges to the sauce.
  29. 29. Let the apples steep in the sauce for 1 to 2 minutes.
  30. 30. Plate the fish rolls.
  31. 31. Pour the sauce with the apple wedges over the rolls.
  32. 32. Garnish the dish with fresh dill tips.
