🍽️ Saffron Apple Fish Rolls

Ingredients
- 16 sole fillets (approx. 50 g each)
- salt
- 2 small, red-skinned apples (approx. 100 g each)
- 6 tbsp heavy cream
- 1 packet saffron threads (0.1 g)
- 1 tbsp chopped dill tips
- 1 tbsp lemon juice
- pepper (from the mill)
- 1 tbsp butter
- 200 ml dry white wine
- 80 g crème fraîche
- dill tips (for garnishing)
Instructions
- 1. Rinse the sole fillets under running water.
- 2. Pat the fillets completely dry with a kitchen towel.
- 3. Cut four of the fillets into small pieces.
- 4. Mix the fish pieces with one teaspoon of salt.
- 5. Place the bowl with the fish pieces in the freezer compartment for about 30 minutes.
- 6. Wash the apples thoroughly.
- 7. Quarter the apples and remove the core.
- 8. Cut the apple pieces into thin wedges.
- 9. Warm four tablespoons of cream in a small saucepan.
- 10. Dissolve the saffron threads in the warm cream.
- 11. Take the frozen fish pieces out of the freezer.
- 12. Process the fish pieces together with the remaining cream in an electric food processor to make a fine paste.
- 13. Stir fresh dill leaves into the fish paste.
- 14. Add some lemon juice to the fish paste.
- 15. Mix the saffron cream into the fish paste.
- 16. Season the fish paste lightly with black pepper.
- 17. Season the remaining whole fish fillets with salt.
- 18. Pepper the remaining fish fillets.
- 19. Spread some fish paste onto the skin side of the fillets.
- 20. Roll the fillets tightly starting from the thick end.
- 21. Heat the butter in a frying pan.
- 22. Place the fish rolls into the hot pan.
- 23. Deglaze the rolls with wine.
- 24. Cover the pan and let the rolls cook for 5 to 7 minutes.
- 25. Remove the finished fish rolls from the pan.
- 26. Keep the rolls warm for a short time.
- 27. Stir the crème fraîche into the wine sauce in the pan.
- 28. Add the apple wedges to the sauce.
- 29. Let the apples steep in the sauce for 1 to 2 minutes.
- 30. Plate the fish rolls.
- 31. Pour the sauce with the apple wedges over the rolls.
- 32. Garnish the dish with fresh dill tips.
- 33. Serve the fish rolls hot.
