🍽️ Mediterranean Fish Ragout

Ingredients
- 500 g fish fillet
- 2 tbsp lemon juice
- 1 onion
- 3 garlic cloves
- 2 tbsp olive oil
- 3 tomatoes
- 300 ml fish stock (from the jar)
- 2 tbsp olives
- salt
- pepper (from the mill)
- Parmesan (block)
Instructions
- 1. Cut the fish fillet into small, bite-sized pieces.
- 2. Drizzle the fish pieces with lemon juice.
- 3. Season the fish with a pinch of salt and freshly ground pepper.
- 4. Peel the onion and dice it into fine cubes.
- 5. Peel the garlic clove and slice it into thin pieces.
- 6. Wash the tomatoes and cut them into small pieces.
- 7. Heat the oil in a pot.
- 8. Add the onion cubes to the hot oil.
- 9. Sauté the onions until soft, without letting them brown.
- 10. Add the garlic slices and the tomato pieces.
- 11. Fry the vegetables briefly.
- 12. Pour in the stock (fish or vegetable broth).
- 13. Let the mixture simmer for 5 minutes.
- 14. Season the sauce again with salt and pepper.
- 15. Add the prepared fish pieces to the pot.
- 16. Add the olives.
- 17. Cover the pot.
- 18. Let the fish cook for another 5 minutes.
- 19. Serve the ragout on plates.
- 20. Grate some Parmesan cheese over the finished dish.
