  1. 1. Cut the fish fillet into small, bite-sized pieces.
  2. 2. Drizzle the fish pieces with lemon juice.
  3. 3. Season the fish with a pinch of salt and freshly ground pepper.
  4. 4. Peel the onion and dice it into fine cubes.
  5. 5. Peel the garlic clove and slice it into thin pieces.
  6. 6. Wash the tomatoes and cut them into small pieces.
  7. 7. Heat the oil in a pot.
  8. 8. Add the onion cubes to the hot oil.
  9. 9. Sauté the onions until soft, without letting them brown.
  10. 10. Add the garlic slices and the tomato pieces.
  11. 11. Fry the vegetables briefly.
  12. 12. Pour in the stock (fish or vegetable broth).
  13. 13. Let the mixture simmer for 5 minutes.
  14. 14. Season the sauce again with salt and pepper.
  15. 15. Add the prepared fish pieces to the pot.
  16. 16. Add the olives.
  17. 17. Cover the pot.
  18. 18. Let the fish cook for another 5 minutes.
  19. 19. Serve the ragout on plates.
  20. 20. Grate some Parmesan cheese over the finished dish.
