🍽️ Crispy Fish Patties with Fresh Herb Dip

Ingredients
- 500 g Cod fillet (skinless and boneless, slightly frozen)
- 1 Shallot
- 1 Egg
- 1 tsp Mustard
- 2 tbsp Lemon juice
- Salt
- Pepper
- 0.5 bunch Parsley (10 g)
- 2 tbsp Whole wheat breadcrumbs (10 g each)
- 2 tbsp Rapeseed oil
- 0.25 bunch Chives (5 g)
- 100 g Sour cream (30% fat)
- 100 g Sour cream (10% fat)
Instructions
- 1. Cut the fish fillet into large chunks.
- 2. Peel the shallot and chop it roughly.
- 3. Place the fish, shallot, egg, mustard, one tablespoon of lemon juice, salt, and pepper into a food processor or use a hand blender.
- 4. Blend the ingredients until you have a fine mixture.
- 5. Wash the parsley and shake it dry.
- 6. Finely chop the parsley leaves.
- 7. Add two tablespoons of the chopped parsley and the breadcrumbs to the fish mixture.
- 8. Mix everything thoroughly.
- 9. Set aside the remaining chopped parsley.
- 10. Shape the mixture into elongated patties using your hands.
- 11. Heat rapeseed oil in a large frying pan over medium heat.
- 12. Fry the patties for seven to eight minutes until golden brown.
- 13. Turn the patties occasionally while frying.
- 14. Wash the chives and shake them dry.
- 15. Finely chop the chives.
- 16. Stir the chives together with the remaining parsley, crème fraîche, sour cream, and the rest of the lemon juice.
- 17. Transfer the herb dip mixture into a small bowl.
- 18. Pat the finished fish patties dry with kitchen paper.
- 19. Serve the patties with the herb dip.
