  1. 1. Cut the fish fillet into large chunks.
  2. 2. Peel the shallot and chop it roughly.
  3. 3. Place the fish, shallot, egg, mustard, one tablespoon of lemon juice, salt, and pepper into a food processor or use a hand blender.
  4. 4. Blend the ingredients until you have a fine mixture.
  5. 5. Wash the parsley and shake it dry.
  6. 6. Finely chop the parsley leaves.
  7. 7. Add two tablespoons of the chopped parsley and the breadcrumbs to the fish mixture.
  8. 8. Mix everything thoroughly.
  9. 9. Set aside the remaining chopped parsley.
  10. 10. Shape the mixture into elongated patties using your hands.
  11. 11. Heat rapeseed oil in a large frying pan over medium heat.
  12. 12. Fry the patties for seven to eight minutes until golden brown.
  13. 13. Turn the patties occasionally while frying.
  14. 14. Wash the chives and shake them dry.
  15. 15. Finely chop the chives.
  16. 16. Stir the chives together with the remaining parsley, crème fraîche, sour cream, and the rest of the lemon juice.
  17. 17. Transfer the herb dip mixture into a small bowl.
  18. 18. Pat the finished fish patties dry with kitchen paper.
  19. 19. Serve the patties with the herb dip.
