🍽️ Grilled fish fillet with oven potatoes and broccoli

Ingredients
- 800 g sweet potatoes
- 3 tbsp olive oil
- salt
- pepper (from a grinder)
- 600 g broccoli
- 4 spring onions
- 4 fish fillets (from barramundi)
- 2 tbsp butter
- 1 tsp lemon juice
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Peel the sweet potatoes and wash them thoroughly.
- 3. Cut the potatoes into thick slices.
- 4. Line a baking tray with baking paper and arrange the potato slices on it.
- 5. Drizzle the potatoes with 2 tablespoons of oil.
- 6. Season the potatoes with salt and pepper.
- 7. Bake the potatoes in the oven for about 25 minutes until golden brown.
- 8. Wash the broccoli and remove the tough stems.
- 9. Break the broccoli into small florets.
- 10. Boil water in a pot and add the broccoli for 5 minutes (blanching).
- 11. Remove the broccoli from the water and let it drain.
- 12. Wash the spring onions and trim the ends.
- 13. Cut the spring onions into 3 to 4 centimeter long pieces.
- 14. Rinse the fish fillet briefly and pat it dry with a kitchen towel.
- 15. Drizzle the fish with some oil.
- 16. Season the fish with salt and pepper.
- 17. Grill the fish on a hot grill for 3 to 4 minutes on each side.
- 18. Heat butter in a hot pan.
- 19. Add the broccoli and spring onions to the pan.
- 20. Toss the vegetables in the butter for 1 to 2 minutes.
- 21. Season the vegetables with salt and a splash of lemon juice.
- 22. Plate the oven potatoes and vegetables on the plates.
- 23. Place the grilled fish on top of the vegetables.
- 24. Serve the dish immediately.
